Very informative and well organized presentation! I've cured Italian sausage on and off for quite a number years. My knowledge and technique has been based solely on boyhood memories of when my grandfather and dad cured sausage and prosciutto. Unfortunately, there were times when the results of my efforts were not so good ...while at other times the result was excellent. I appreciate your willingness to share your knowledge so that I might take my "Salumi" making skills to the next level. Thank you!! I plan on purchasing your book as soon as possible, however before purchasing the eBook, is there a "hardcopy" version available? If so, how and where can I purchase it?
