CHICKEN MAJESTIC RECIPE INGREDIENTS :
Chicken cut into thin strips 500 gm
For Marination:
Ginger garlic paste 1 tbsp
Baking powder 1 tsp
Chili powder 1 ½ tsp
Black pepper ½ tsp
Salt 1 tsp
Chicken powder ½ tsp
Thick yogurt 3 tbsp
Allspice ½ tsp
Chat masala 1 tsp
Mustard powder 1 tsp
Lemon juice 2 tbsp
Sesame seeds 2 tbsp
Ingredients to Coat :
Flour ¾ cup
Rice flour 2 tbsp
Sesame seeds 2 tbsp
Salt ¼ tsp
Chicken powder 1 tsp
Oil for deep frying
Ingredients for Tempering:
Oil ¼ cup
Chopped garlic 1 tsp
Chopped curry leaves 8-10
Green chilies cut lengthwise 4
Soy sauce 1tbsp
Crushed red pepper ½ tsp
Allspice ½ tsp
Cream 3 tbsp
Vinegar 1 tbsp
Salt ¼ tsp
Ketchup 2 tbsp
METHOD :
Marinate chicken with the marination ingredients and leave it for 30 mins. In a bowl mix together all the ingredients, take one marinated strip at a time, and roll well in seasoned flour, arrange the coated strips on a tray, you can also freeze the coated strips to use them later or fry them immediately. Heat oil for baghar, fry chopped garlic, green chilies, and curry leaves, add all the rest of the ingredients to the baghaar and mix well, add the deep-fried chicken pieces to the baghar, and toss well for 1 min, serve as a starter.
DAIGHI AALU KOFTA RECIPE INGREDIENTS :
Mince ½ kg
Roasted gram 3 tbsp
Poppy seeds 1 tbsp
Coriander powder 1 tbsp
Cashew nuts ground 15
Salt 1 tsp
Allspice powder 1 tsp
Ginger garlic paste 2 tbsp
Coriander leaves chopped ¼ cup
Brown onion crushed 2 tbsp
Chili powder 1 tsp
Yogurt thick 1 tbsp
Green chilies grinded 4
Coriander leaves ground 2 tbsp
Onion ground ½ cup
Bread slice soaked in water 1
METHOD FOR KOFTA :
Put all the above ingredients in your mince in the chopper and grind to a smooth fine paste, mix well, and keep aside.
INGREDIENTS & METHOD FOR YOGURT MIXTURE :
In the bowl add 1 ½ cu yogurt, ginger garlic paste 1 tbsp heaped, brown onion crushed ¾ cup, chili powder 3 tsp, dhania powder 1 tbsp heaped, allspice 1 tsp, roasted and crushed cumin 1tsp, mix all together, keep aside.
Other Ingredients :
Oil ¾ cup
Mixed whole spices 1 tbsp
Water 1 cup
Nutmeg ground ¼ tsp
Mace ground ¼ tsp
Green cardamom ground ½ tsp
Ginger julienne 1 tbsp
Coriander leaves for garnishing
Dried fenugreek ½ tsp
METHOD :
Heat oil in a pan, add whole spices, half a cup water, and your yogurt mixture, and fry for 5 mins, make koftas with mince mixture and add it to the oil slowly, add 1 cup water with potatoes, cover, and cook for 5 mins on high flame, now cook on low flame till potatoes tender, add in brown onion crushed 1 tbsp, kasuri methi ½ tsp, Nutmeg and mace powder, green cardamom powder, leave it on dum for 5 mins, remove and garnish with ginger julienne, coriander leaves, serve with parathas or taftan.
