Arabic (Middle Eastern) spicy sauce serves to a many rice dishes such as machboos, mandi, kabsa.
I share with you two versions of Dakkous. One hot (warm) dakkous (daqqus) and another one serves cold ( or room temperature).
Choose your favorite.
Two versions of dakkous tomato sauce.
Recipe 1:
Dakkous (daqqus) sauce recipe (serves hot):
5-6 tomatoes (600 g)
2 tbsp. (30 ml) olive oil
5 garlic cloves
1 teaspoon of vinegar
1 chilli pod
1/2 teaspoon salt
1/2 teaspoon cumin
fresh mint ( or dry)
1. Take a fresh tomatoes, remove the skin if tomatoes has a hard skin. Blend tomatoes into a puree. Keep Aside.
2. Add olive oil in the pad, add garlic and chilli, fry till soft and golden color.
3. Add 1 teaspoon of vinegar and after 20 seconds add the blended tomatoes.
4. Add tomato puree.
5. Stir to combine. Add salt, cumin and fresh or dry mint.
6. Cover and let it simmer for 15 mins.
Note! if you prefer less thick sauce, add 1/2 cup of water.
Recipe 2:
Tomato sauce (without cooking). Serves cold.
4-5 medium tomatoes (approx. 500-600 g)
1 chilli pod
Coriander fresh (or dry leaves 1/2 teaspoon)
1/2 head of red onion ( 2 tbsp.)
2 cloves of garlic
salt, black pepper
1 tbsp. of lemon juice (or 1 teaspoon of vinegar)
1 tbsp. of tomato puree
This version of cold dakkous need to have a texture of evenly chopped tomatoes and veges. If you have a small quantity just chop it just by knife or chopper, or just pulse it few times in a blender.
simply combine all the ingredients, pulse it and add salt in the end.
Serve it as a side sauce for any rice dish! Dakkous sauce is amazing side dish and will add a bright note for your lunch/dinner.
