dal tadka restaurant style | tadka dal | dal fry | secret tips for yummy dal tadka
Wash soak for 30 minutes and drained 2 cups dal.
I used one cup toor dal, 1/2 cup each of moong and chana dal.
Transfer to a cooker
Add 3 green chillies, 2 inch Ginger peeled and sliced, 4 big cloves of garlic , 1 onion chopped, q tomato chopped, 1/2 tsp turmeric pdr, 1/2 tsp red chilli pdr, 1 .5 tsp coriander pdr, 2 black cardamoms, 2 bay leaves, salt and 4 cups of water.
Close the cooker. Cook on high flame.
Allow total of 5 whistles, 1st whistle on a high flame and remaining 4 on a low flame.
After pressure is gone, open the cooker
Discard the balck cardamom and bay leaf.
Mash the dal
Add hot water to adjust consistency
Bring it to a boil and switch off the flame
Garnish with coriander leaves.
Now get 2 tbsp each of ghre and oil
Add cumin seeds 1 tsp, 2 dry red chillies, 4 big cloves garlic chopped
Stur until garlic changes colour
Switch off the flame.
Now add 1/2 tsp asafoetida, turmeric powder 1/2 tsp, 1.5 tsp Kashmiri red chilli pdr, 1tbsp Kasuri methi, 1 tsp amchur pdr . Mix
Add this tempering to the dal.
Enjoy yummy dal tadka with rotis or rice.
