Dalma Ingredients:
Lentils Used For Making Dalma
1 cup Moong Dal
1/2 cup Toor Dal
How To Prep The Veggies For Dalma
1 cup Moong Dal
1/2 cup Tur Dal
1/2 cup Red Pumpkin (diced)
1/4 cup Carrot (sliced)
1/4 cup Small Green Brinjal (chopped)
1/4 cup Potato (peeled & diced)
3-4 French beans (chopped)
1/4 cup Yam (chopped)
3/4 tsp Turmeric powder
1/4 cup Onions, (sliced)
2-3 nos Green Chillies (slit)
1 tbsp Ginger (crushed)
Water

About Dalma
Dalma is a dish made from dal and vegetables. It is generally made from toor dal and contains chopped vegetables like green papaya, unripe banana, eggplant, pumpkin, gourd, etc. It is garnished with turmeric, mustard seeds, and panch phutana. There are several variations of this dish. Indigenous vegetables used in Odia cuisine are Pumpkin, Gourd , plantains, jackfruit, and papaya. Vegetables such as potatoes, cauliflowers, and cabbages are also used alongside local vegetables. Pancha phutana is a blend of five spices that is widely used in Odia cuisine. It contains mustard, cumin, fenugreek, aniseed and kalonji(onion seeds). Garlic, onion and ginger are used in most of the food. Traditional Odia Food and Temple food preparation doesn't allow the use of garlic or onion and is purely vegetarian. Turmeric and jaggery are used regularly. Compared to other regional Indian cuisines, Odia cuisine uses less oil and is less spicy while nonetheless remaining flavourful. Rice and Wheat is the staple food of this region. Mustard oil is used in some dishes as the cooking medium, but ghee (made of cow's milk) is preferred in temples. In old times food was traditionally served on copper plates or disposable plates made of sal leaves. |

Thank you for highlighting Odisha’s comfort food Dalma. While there are many ways of cooking Dalma, the most popular version is cooking the lentils and vegetables together, adding vegetables based on their cooking time., adding crushed ginger and green chilies while cooking . Tempering in ghee with cumin seeds and red chillies., asafoetida and the Dalma spice mix.

This is one of the ways of cooking dalma, but not the best way. I am from Odisha so I have credibility to comment on this.

My Nana Nani used to stay in Bhubaneswar & my aunt used to cook Dalma whenever we visited them...Love it....a similar version is also available with rice as prasad in Puri temple. It's sweet, salty and tasty.

Well presented. In temple dalma, onion is not used. Also, ghee is used for tampering. Ghee, panch foran and hing is must for the aroma.

Mostly here in odisha... It goes with the rice with some desi ghee on top of it... Also goes well with puris... Do give it a try.. you will definitely gonna love...😊

Everything is good...but most of the times as a vegetarian and mandir dish we don't add onion to dalma... Other wise awesome recipe ...we do cook like this . 👍

Doesnt potatoes and yam take longer to cook ? By then the brinjals will be all soggy and mashed up, right?? So is it advisable to put in all veggies to cook at the same time?

I do understand the question... I am an Odia... I eat this dish very frequently... I know how to cook... Given your question... Irrespective of the cooking time of any vegetable, all of them are put altogether... Only one whistle is required to cook after adding vegetable... If you are cooking in a pot...then you can add vegetable one after another according to your taste and texture preference... Hope now you get me.

Indeed, it is a famous dish in Odisha and I appreciate Chef’s efforts in bringing Odia cuisine to the limelight. But this is not how Dalma is prepared in Odisha. Sorry, but this is just sambhar without Sambhar masala. Any Odia will know that in Dalma, veggies are cooked with raw dal.😊

This is not dalma, the use of onion and mustard oil is preposterous, bcoz we don't use them in the temple, we make with only Indian vegetables and we cook daal with vegetables and we use ghee for tempering

The recipe is so off from the original authentic odia dalma. The one you are suggesting is more to appease to a North Indian palette. The OG Dalma is never spicy, the dal is not cooked like a pulp and only has lightly spiced tempering that too wid cow's ghee. Try it that way, you will find it much more delicious. And it goes best with par boiled rice. Bon apetit

This is not dalma for sure… please don’t show anything just for the sake of it.. all of odisha will be very upset seeing this not at all dalma recipe… dal is cooked along with vegetables that gives all the flavor
