I can't eat BBQ or seafood without a vegetable with vinegar. Coleslaw, greens, pickles etc. As the youngest of 8 grown up on the farm, I too struggle in small batches😂. Having made a version of this, will definitely be trying your recipe! Happy new year 🎉

I've made a few jars myself over the last few months. Thanks for the beet recommendation. I did notice mine weren't as bright pink as others I have seen.
