Instructions
Prepare the nuts and chocolate needed for this recipe. Separate the peanuts from the almonds and cut your chocolate bar into small pieces for easy melting. You can use soaked almonds for the almonds, as they turn softer than fresh ones. Just make sure to dry them first before coating them with chocolate.
Simmer some water in the instant pot and place the glass bowl on top with the chopped chocolate and coconut oil. Let it absorb the heat and stir it with a stick to melt the chocolate easily. Keep stirring until you get a silky and smooth chocolate consistency.
Toss your choice of nuts into the melted dark chocolate and coat them with chocolate evenly. Make sure that you do not mix the nuts in one mixing bowl. If you are using peanuts and almonds, prepare separate bowls for each. Once they are fully coated with chocolate, start making chocolate-covered nuts by transferring each coated peanut and almond onto a baking sheet lined with parchment paper. Make spaces in each nut so they will not stick to each other.
Using a spoon, form the chocolate-coated nuts into a cluster and transfer them onto a parchment-lined baking sheet, as you would the individually-coated nuts. You can use mini cupcake liners to form clusters for the peanut clusters since peanuts are smaller than almonds, and you might struggle to create them directly onto the baking sheet.
Use a chocolate bar mold or a bread loaf silicone mold to form the peanut and almond bark. Transfer the chocolate-coated nuts into the bar molds and fill them with more chocolate to make them perfect once they harden.
