Because this video is incresibly outdated, most of the people just watch the all bosses with both dlc, not just the ariandel one.

I can't speak for him but I've noticed that when I practice a hard boss for long enough I start to enter "The Zone." It's a state of pure focus and zen like calm that allows you to maintain a cool head even in the heat of battle. However I'm lucky to enter "The Zone" once and it doesn't last once I beat the boss. However it becomes much easier to get through the whole fight without getting hit, I did that to Nameless King recently. I doubt Squilla is using The Zone, from what I can tell it's just pure dedication and practice. But who knows maybe nothing I said was accurate.

The weapon infusion he picked doesn't scale as good, and instead adds a decent amount of flat damage, that way he can dump points elsewhere

He played assassin. They probably just have move endurance than the class you used to
