You're misunderstanding what the big bang really is and how its different than a supernova. The big bang is the expansion of the universe in all directions while a supernova is just an explosion of an object when it cannot support its own weight. The two are not interchangeable.

"Everything doesn't have to have a start and everything does not have to have an ending." Well, why not? Also, modern theories call it the ending, but really there will just be cold photons and dark energy floating through a dark universe... so the universe will in some form be there. Edit: Also, I think Protons will dissolve before we get Iron Stars. Every other major particle with mass does...

Fun fact: this may not be the last thing that will ever happen, because now it's time for dark energy, that if it works as we expect it will create new pop-up universes

"Degenerate": it's quantum mechanics jargon for systems where all possible states are already occupied so can't just squeeze more particles in.

The thing about black holes evaporating could in some case be wrong as you said, but there's a good reason behind it. It's the notion of black holes having entropy. Although black hole thermodynamics is complex thingy, it's well stated that they should have non 0 entropy. Otherwise, black holes absorbing matter would make the global entropy of the Universe *decrease* , wich is almost as important as the conservation of energy. (In fact, conservation of energy is TD's first law. Entropy increase is the second law. It's almost, if not equally important.)

Heres a depressing thought, none of this matters. As far as you will experience, the universe ends when you die.

"How do they know" they literally counted the mass, it's absurd but man are people clever. There's a RU-vidr called A.Collier, she's an astronomy PhD and she talked about this once, her channel is amazing but the videos are long and plain
