These videos are great, thanks so much for sharing your experience with the rest of us! I'm going to be cooking my very first catering event for 55 people this weekend and I'm not gonna lie I'm pretty nervous, but your food truck videos have really helped to give me some insight on how to plan a cook with numerous menu items for a large number of people. Oh and by the way one of the things I'm going to be making is smoked salmon which I learned how to make from your video a few years back ;) It blows people's minds away everything I make it for them and it's still one of the best things I know how to make. Anyway just wanted to share my appreciation for your videos and the positive impact they've made on my life!
I highly appreciated seeing the third part. I can smell the brisket while you cut it. The side dishes look fantastic. Loyal customers become VIPs by all means. They are the foundation of any business. Great stuff, as always, Joe. I have learned a lot from your channel. Not just looking at mouthwatering creations but seriously getting deep, valuable know-how about spicing, timing, and preparing the BBQ.

So proud of you Brotha.✊🏾 You ever thought about using a cold smoker to make your burger? Grab a tote and a smoker gun, using the wood profiles you use on your pit. Fill that sucka up with smoke close the tote and forget it in the fridge for four hours then flip them and and hit them again with smoke. Then stack them and hold them in the fridge. That way they can be made to order and it with help with your efficiency and it will be fresh.

Finally got a chance to visit Joe at his food truck. Came in from the Orange County in Cali heading towards San Antonio and boy Joe did not disappoint. Tried a little bit of everything and already planning the next trip. The brisket was moist and tender, definitely a winner. The pulled pork was my wife's favorite. I was surprised by how much flavor the chicken had, the seasoning was just right. But I got to say the star of the show was the brisket burger, not only tender but the best damn burger I ever had. Didn't need a lot of fixings, the meat did its talking. Even had a chance to have a short conversation with Joe and he is a real down to earth guy. Make sure you stop by the next time you're in El Paso.
Wow, that looks like a lot of fun but also work! I can't wait until we can get over there. We have a softball tournament July 28-30 for our granddaughter in Las Cruces so maybe then if not before.

Dang this looks amazing. I wish I was near El Paso. Finally started smoking on my vertical smoker. Last 3 weekends have been ribs and made random friends out of the people in my apt building. Tomorrow I start my first Brisket. You're an inspiration for sure.

We don't have decent BBQ in my area. I have been to a few comp bbq schools just for my own experience, but I have been encouraged by several ppl to start a food truck. It looks like a lot of work lol.

YAS!!!! Texas chilli had beans, and some smarty pants came along with their disdain and changed it. I read a book about Sam Chisholm (The first black deputy of the "Indian Territories [many may know him as the Lone Ranger...I'll be politically correct]) and his love for Texas chilli and he mented the BEANS! Dang! A good friend/coworker bought a Dodge 4x4 pickup from a guy in El Paso (shortly afte New Years). He asked me if I'd join him in a road trip, to go down there, buy it, and bring it back to Minnesota. I researched the 'road time', got more answers from him, and declined his offer. IF I had joined him, we would've dropped by for lunch!

Very helpful video. I'm actually been looking at getting me a food trailer. I wish we had a food truck park like where you are. Im doing texas style bbq as well. Im in Indiana and not enough good bbq joint. Hope to see more content like this help a lot. Thanks.

That all looks Fantastic Joe. I wish I was near because I would be a loyal customer for sure. As a matter of fact I would probably drive you crazy!!. Unfortunately I have no BBQ trucks near my Home. I prefer a truck compared to a brick and mortar location. The closet Good Truck I found was on the way to cabin and is about 45 - 50 miles out. I should say a GOOD Tasting BBQ.. There are some closer but are not on par. They open 1-2 days Weekend and Mostly Dried out with a bunch of sauce on it to cover. They over cook the protein which tells me too Hot and Too fast. I tried to say something nice to advise and was told if I don't like. Don't Buy it. And now I do not buy it and make sure the word is out. Nice Customer service!!!!.
