My daughter is a chef in Alberta now. Her current workplace relies on her 100%, she’s the only one in the kitchen and needs to prepare a menu 8 weeks in advance! She left a chain restaurant job as manager of kitchen for her current employer! I used to be a soul chef when I was a teenager, hard work busting balls daily! Your work doesn’t go unnoticed! Good job! ❤️🇨🇦❤️ from Ontario. My son is in the health care field in Vancouver and daughter is in Fort McMurray!

Your whole day is literally work, but you seem to enjoy it! I worked at a higher end restaurant and would often work 12 hour shifts and it just wasn't for me so I quit after 4 months. I ended up finding a cooking job that's more my style and pays more, with 40 hour work weeks :D

So love these bts perspectives to the inner workings of a restaurant, especially the backend! To be in the culinary world, you have to show grit and passion for the art at the same time! Have to be in tuned to all your senses: sight, smell, taste, feel and sound! Dang, the discipline and steadfastness of a military soldier with the finesse and timing of any genre of artists. Filmed and edited so well. Great flow, great feel. And a greater appreciation to the service industry for feeding everyone’s craving ass ass*ss! Thanks, Ryan!

Seeing this makes me reminisce about my first time as line pastry cook in a small restaurant. I was the only girl in the kitchen and had to share (or in my case fight for) ovens with the commis and line cooks. I would normally bake in their break hours and have this super small station in the side of the kitchen, out of their line. That small station is my world and I make everything in it. I appreciate how you are doing breads, desserts, trimming octopus and doing culinary prep. Kudos! More power!

God how I miss working in the restaurant, especially loved coming in getting everything ready and working through the day and evening just getting shit done and helping along the way with lunch service dinner service then the bit@hing lol then clean up, and prepping for the morning to start all over again with a different menu.

I know how chaotic a kitchen can be but my God how calm he is. It shows how much passion he has in his craft. Food prep, service and clean up after is a ton of work.

Great video. It has to be in your blood. I was a Chef for many years doing the long hours to serve guests. There’s a lot of self satisfaction when you’re able to complete multiple days without any mistakes. When the guests love your food, that’s a great feeling of pride.

Im amazed how chefs can do this day in and day out. Im tired for cooking for me and my partner for dinner but imagine doing it as your line of work and cooking multiple dishes for other people and prepping for the next day. Thats a lot of work and pretty awesome!

I really liked this. I work a breakfast buffet at a hotel. This really put in perspective of what's it like to have to prep more complicated things. Maybe I should challenge myself and go to a restaurant like this.

Love your work. Reminds me of my time in kitchen. Just gotta put those tea towels/chux below chopping boards for steady cutting. Gotta be chef 102, after seasoning everything. Also white board for breads.

I love the fact this video title says "line cook" and I see you do so much prep-prod. Where I work, it's a two restaurant, one business. We have two teams for each kitchens(each restaurants, one line kitchen, and a central-production kitchen) and I'm responsible for prep-prod, pretty much as a one man army, relying on the initiative and time of the rest of kitchen's staff to contribute whenever they can. It is very difficult to make some of the line cooks understand that we are all one big team. Everyone must contribute whenever they can, be it, cutting veggies, making pico, helping organise the storage area, communicating what is low, what is plenty ... etc. Basically : "Doing nothing? find something to help with". For me it goes without saying, but I see a lot of "line cooks" just going to the line, doing the minimal possible job of refilling station (For their shifts) and waiting for tickets, meanwhile being on their phone or wasting time in so many ways. The last 15 months, I've put a lot of pressure on the administration and it is starting to pay off. But there will always be ungrateful, lazy workers who can't see the big picture. Thank you for your video, I really enjoyed it!

Yo, good stuff, bread looks great. You should try inverting your lids and bake with the deep one on top. You can lay it down gently, score easier and it’s better for watching the bake/color.

The thing missed in this is that he woke up in a tiny apartment he can barely afford or lives with his parent, or both. Vancouver is a great city, thought I might wanna live there someday. Then housing became an investment and suddenly I wouldn't move there if a job offered me 100k+ to move there. Nice work!

I live here (Oakridge) and I completely see where you're coming from. 100k here is "live okay as a renter, but still can't buy a decent condo" money. And that's doing better than the majority of the city. If someone's a line cook then they have 3/4 roommates. Okay in your 20's, but who wants to do that permanently? Even though I love my city, I'm taking a strong look at Alberta/Saskatchewan/Manitoba. Buying a condo for 250k >>> seeing the ocean every day

there is nothing hotter than a guy who knows how to cook. the tattoos and veiny hands/defined arms make it even better. it was fun to watch a behind the scenes especially in the service food industry. people really underestimate the time effort and energy that goes into making the food taste good/be presentable. being a server was a humbling experience that I recommend everyone have at least once. it makes you consider others more and more empathetic to people in general.

Also as a friendly suggestion, I would recommend to silence the scenes when you only hear the overhead fans and just put a little music that you like. I love the cooking sounds but the fan cuts deep into my soul 😂

Enough of the gloomy, Disney world in Orlando is offering up to $6000.00 sign on bonus for Sous Chef's, its a no brainer, you guys are too young to live your lives in rain, cold and gloom everyday. obviously Joe just leased an office so he's not going anywhere, so maybe it's time to rethink about the future.
