I hope that y'all are having a great week and the most wonderful day! I know that I am because my fantastic friend @NilesAbston came to join me on our FIRST DDK WITH A GUEST SINCE FEBRUARY OF 2020!!! A huge huge thank you to AJ Lodge (@aj.lodge), Amanda Sharpe (@amandajanesharpe), and Avery Kentis (@averykentis) for making the production and sound as gorgeous as it is!
We make an absolutely perfect roasted #chicken and I invite you to come cook with us!! Make this and you'll have dinner and lunch for like three days at least!!

| Roast Chicken and Potatoes |
Compound Butter:
2 sticks of room temp salted butter
1 teaspoon each of lemon zest, garlic powder, paprika, chipotle powder, black pepper
1 tablespoon each of salt, rosemary, and thyme.
Chicken:
1 large chicken, spatchcocked (butterflied)
Potatoes:
2 large russet potatoes
1/2 of an onion, chopped rough
7 crushed cloves of garlic
1 teaspoon each of lemon zest, garlic powder, paprika, chipotle powder, black pepper
1 tablespoon each of salt, rosemary, and thyme.
