I watch your video's from Belgium. I love them! You work so so hard, unbelieveble. I geniunly wonder if you have time left for yourself. Can you have a family life, social life, a hobby besides baking. Because it looks like you spend every minute at the bakery. RESPECT 👏
Genuinely amazed on how you can get so many cakes done so quickly. It takes me an entire day to make a cake. I made a 3 layer sheet cake yesterday. Started at 10:00 am and finished at 1:00 am today just for a single cake.
She said she baked the cake one day, then they crumb coat it and put it in the fridge. And then a different day she does the icing. So she's baking, coating and icing the cakes over a period of 3 days.

aww ty! I used to make lots of wedding cakes but now limit the custom orders as we are operating at capacity, hopefully with a bigger space we could have a bigger team and do more :')
May sound funny, but when you work till midnight and come back in at 4-5 am…maybe you should have a fold up bed in the back and sleep there to give you more sleep time. Just a thought. When a person really enjoys their job, they are willing to go the extra mile. Well done. 😊

Loving the videos here in US. I prefer Swiss Meringue Buttercream to American. However, if using my russian piping tips I use the American. Does your recipe hold up with those tips?
1) I'd assume that if someone wants a non-standard cake icing and piping color there is an extra fee? 2) When you set up a color to frost or set up a piping bag do you use it on all the cakes that need it at the same time?

I knew a lady who ran a cake business out of her home in Dale City VA. This was back in 1989. She would use Chrisco and food coloring to decorate her cakes. No lie.
I'm surprised you do the fondant letters yourself, I thought this was something you can buy in bulk. Is there any worth in doing a lot at a time and storing them for later or will they go bad quickly?
