To anyone learning, here's a tip on separating egg whites. Use three separate bowls to cleanly separate the eggs. One at a time over a bowl, separate eggs by letting the whites fall into the bowl. Hold the yolk in the shell until the white is all in the bowl. Then, put the yollk in a separate bowl. For the rest of the eggs, repeat the process over the thief bowl. Then drop the yolk in with the first yolk, and whites unto the first whites. This way, if any yolk and whites get mixed together only one egg is compromised . You can set it aside to use for a different recipe. If this happens, get a fourth bowl to do the remaining eggs. Nicole is very practiced, so she doesn't have to do this. To incorporate the meringue into the cake batter, use a gentle folding motion, rather than stirring or mixing. If you are not gentle with it, the air will be deflated and the cake will not turn out right.

I just made a chocolate cake from a box cake mix. I did not like the taste at all. I will try your method of baking a cake -- one of these days lol. I would like to make cakes for my grandkids but they live in Davao and one in Cambodia. Wouldn't it be amazing if I could easily ship the cakes to them. One of these days, our technology will get us there. Your ease in making such creations is amazing. I will try steaming instead of baking the cupcakes!!!
