In the kitchen at Mamajoun, an Armenian pizzeria in Toronto at the intersection of Warden and Ellesmere, chef Mihran Boudakian prepares a lot more than pizza. His restaurant has become a nexus of traditional Armenian food for the Southern Ontario region.

Dietary Notes:
Dairy free (substitution required for garnish), nut free, peanut free
What you'll need:
- 1 kilogram (2.2 lbs) of ground beef
- 1 kilogram (2.2 lbs or 8 cups) of all purpose flour
- 550 mL (2 and ⅕ cups) of lukewarm water
- 1 L (4 cups) of chicken stock
- 1 large spanish onion, finely diced
- 2 tablespoons (30 mL) of tomato paste
- 2 tablespoons (30 mL) of salt, divided
- 1 tablespoon (15 mL) of olive oil
- ½ tablespoon (7.5 mL) of black pepper
- ½ tablespoon (7.5 mL) of aleppo pepper.
- A dollop of full fat yogurt to serve (optional)
- Sumac for garnish

Growing up we only knew manti made with lamb and spices similar to those used in lahmajun...then my mom went really nuts and started using puff pastry for the dough....wow!

Traditionally my family - from Aintab - prepared the meat mixture by adding chopped parsley to the onion, red pepper and meat mixture . However any type of manti is a great comfort food ! Thank you for the recipe and very patient explanation .

I recently made manti for the first time, turned out wonderful but your dough looks a lot more "stretchy" and softer, my recipe contained 1 egg. Will defo try your dough next time.

When you make the parcels does the mincemeat leak out when boiled. I made the parcels but pinched each side closed? 🤔

@@patriot-ny5el it's not tho. The manti is turkish interpretation of the chinese dish mantou, since turks come from middle asia. Manti has nothing to do with armenia, it makes no sense, don't be ridiculous. Armenians have absolutely near zero national dishes, since you were neighboring greater nations.

I usually freeze them after cooking in the oven. You may warm them up for your friend's birthday and serve it with sauce and yogurt.

Hi Ayesha! Yes you can, but you would fold the dumplings in a different way, so Mihran's method wouldn't work the same.

Yes you can make it like a soup, prepare the same mante exactly like Mihran did , then boil 4 to 6 cups (or more) water or chicken stock, add tomato paste, lemon juice and dry mint, and drop the mante in it, while eating in your plate add yogurt with squeezed garlic(very little), very tasty soup

You sound illiterate and rude . Manti can be cooked either boiled or in an oven. Both ways are widely known depending where u are from .

You sound like a nincumpoop. Aren't there many ways of making any dish? Anyone can make substitutions to anything they want. Some people even use turkey meat for filling! GASP! 👀

I've learned to cook the manti first in the oven and then add it to the chicken broth mixed with yogurt in order to have it as a soup. Some people just toast it and add a bit of broth topped with yogurt garlic sauce . It depends how you like it . You don't need to stay out of the kitchen - it's a matter of preference !

I prefer boiled too but oven is easier and you don’t have to worry about them breaking like in the boiling pot of water. (Not that it is a huge problem, but transferring the delicate uncooked manti to the pot is sometimes momentarily stressful)
