Delicious Chicken Fricassee Recipe

Chicken Fricassee is an amazing weeknight meal to serve up to family and friends. This classic French one-pan meal recipe is incredibly simple to prepare, and the best part is that it can be customized to you and your family’s liking.
Ingredients for this recipe:
• 1 broken down roasting chicken
• 2 tablespoons unsalted butter
• 2 cups peeled yellow pearl onions
• 1 pound quartered button mushrooms
• 2 finely minced cloves of garlic
• juice of ½ lemon
• 3 tablespoons all-purpose flour
• ½ cup chardonnay or other dry white wine
• 3 cups chicken stock
• 1 bay leaf
• 3 parsley sprigs
• 3 thyme sprigs
• 2/3 cup heavy whipping cream
• sea salt and fresh cracked pepper to taste
Serves 6
Prep Time: 15 minutes
Cook Time: 45 Minutes
Procedures
1. Season the chicken on all sides with salt and pepper.
2. Add the butter to a 12” large cast iron skillet or Dutch oven over medium-high heat.
3. Add in the chicken skin side down and cook for 3-4 minutes per side or until well browned.
4. Remove the chicken and set aside. Next add the onions and mushrooms to the pan and sauté over low heat for 5 minutes white frequently stirring.
5. Add in the garlic and cook for a further minute and deglaze with lemon juice.
6. Stir in the flour until completely mixed in and then add in the wine and stir in just until combined and then add in the stock.
7. Cook for 3-4 minutes over low to medium heat or until it becomes thick like gravy. See Note.
8. Add in bay leaf, parsley, thyme, salt and pepper to the sauce and mix in.
9. Place the chicken back into the pan, cover with a lid and cook over low heat for 25-30 minutes or until the chicken is done and cooked throughout, 165° internally.
10. Remove the lid and stir in the heavy cream. Serve hot.
CHEF NOTES:
Make Ahead - You can make this up to 2 hours ahead of time, simply keep warm in the oven with a lid over top at 200°.
How to Reheat - Add the desired amount of chicken fricassee to a medium size pan with a lid and heat over low heat until hot or in the oven at 350° for 15-20 minutes or until hot.
How to Store - Place covered in the refrigerator for up to 5 days. This will freeze well covered in the freezer for up to 2 months. Be sure to thaw for 1 day in the refrigerator before reheating.
You do not have to use pearl onions in this recipe, simply substitute with a regular peeled and sliced yellow or white onions.
Feel free to use whatever cut of chicken you enjoy the most, so feel free to use all breasts, thighs, drums or any combination.
If the sauce is not thick before adding in the chicken, simply add in a little slurry (2 tablespoons corn starch mixed with 1 tablespoon water).
Try using ½ and ½, whole milk or yogurt instead of heavy cream if you are looking for a lower fat version.

I love fricasse, lately I have added also chopped carrots and instead of heavy cream i have used coconut milk and it was still insanely good. I am serving it with mash from potatoes, sweet potatoes and carrots (with cream and butter). My family absolutely loves it.

I just discovered you!! I’m surprised you’re not super famous yet!! I’ve binged watch a few recipes already, but was thinking maybe you’re not at a million subscribers yet, simply because you just started and was kind of bummed cuz I thought there wouldn’t be much recipes to watch and get inspired from, but as I kept scrolling through your videos , I noticed that there are tons of recipes that are from years ago! Billy you were right, this chicken fricassee is absolutely delicious. I made it tonight and added some Applewood smoked bacon along with carrots, celery and rosemary, my wine of choice though is Marsala over Chardonnay. I have to compliment YOU, it was a memorable meal. Thanks for posting!

This used to be a regular in my house growing up, but without the veggies. Fricassee day was always my favourite. Yours also looked delicious. My mum wouldn't add any cream to it tho, instead she would whisk an egg yolk with milk at some point to thicken the sauce. It's lighter like that.

3 tsp of flour to 2 cups of stock seems to the core of making a good gravy. I've been taught 2 tsp, but the consistency of your gravy is what I want. Thanks chef! You got a new subscriber!

This dish was sooo yummy. I used tomatoes instead of mushrooms cause I don't care for them. N no wine in my dish just the chicken broth. Sooooooo yummy. I also took my chicken back out when I added the cream and put my chicken in the oven under the broil just for a little more extra crispy skin. Then threw it in the cream. Sooooo yummy . Thank you

Love your recipe, as a French man I'd add two tea spoons of Dijon mustard and replace the wine with a good white Porto to add strength and sweetness at the same time.

I watched this video well over a year ago now, tried the recipe immediately and fell in love. Quickly became a staple in our household. My grandfather passed back in June 2021, I made this recipe roughly a week before he passed. I have the (now very precious & hilarious) memory of him spending most of the meal slandering my other family members cooking (won’t name because I’m a sweet niece ok), and saying this was one of the best meals he had in years. It was the last meal I got to cook him, and I’m so grateful I chose this dish. I always get a chuckle when I think of the memory now, but really, I can’t say thanks enough for giving me that moment I had with my grandfather- it was priceless. Thank you for the wonderful & easy recipe.

Made this tonight for my son and I (because my wife hates mushrooms) and it was great. Used a chopped yellow onion instead of pearl onions, but otherwise followed it exactly. If you're reading this, give it a shot. Well worth it.

Super delish...grandma used sherry vs white white, a dash of capers and she lightly fried the floured chicken. We ate that with tomatoes salad and biscuits...omg thats good eating!!! Fun fact, Abraham Lincoln really liked this meal. His wife Mary Todd would usually try to get the White House chefs to make this to tempt his appetite. Mr. Lincoln usually ate oyster soup, Boeuf ala monde, etc. He liked food that was simple. However, when he became president sadly the stresses of the office hurt his appetite. Mary Todd and the White House chefs would make this when they were worried that the president wasn’t eating enough as he couldn’t resist this very tasty meal.

Shalom! Looks so deliiish! My little Creole grandmother would cook her Fricassee very much like your dish. Granny's Fricassee did not have mushrooms, wine and pearl onions. Granny used the (sweet Vidilia Onions, garlic, parley, butter, flour, cream, and delightful seasonings, oh yes the chicken was also slightly blackened like yours:) Granny would also finish the cooking in the her oven. Creamy creamy white sauce and succulent beautifully flavorful chicken. Thank you for sharing...Blessings to ou and your!
