Pickled peppers are one of the condiments that always have a place on Iranian tables and are recognized as a popular seasoning among people. Typically, pickled peppers can be made with various types of peppers, such as green or red peppers, and you can even prepare them in spicy or sweet variations. The table below lists the necessary ingredients for making spicy green pepper pickles. Please note that this quantity of ingredients is sufficient for approximately two medium-sized jars of pickles, and if you intend to prepare more or less, you can adjust the amounts accordingly.

| Vinegar | 1 cup |
| Salt | 3 tablespoons |
| Water | 6 cups |
| Tarragon | As needed |
| Dried mint | 1 teaspoon |
Now, let's proceed to the preparation of spicy green pepper pickles. Keep in mind that there are currently various methods for making this type of pickle, but we have tried to provide the simplest instructions so that you can easily prepare a delicious pickle.
Step One: The first step in making homemade pickles is selecting and buying the peppers. It is better to choose thin peppers with less flesh, as these types of peppers become pleasantly crunchy when pickled. Thin peppers are preferable to fleshy ones, but ultimately the choice is yours.
Step Two: After purchasing the peppers, it's time to wash them. To wash the peppers thoroughly, we recommend selecting a large container and placing the peppers inside it. Then fill the container with water until it covers the peppers. Finally, add some salt to the container for disinfection.
Step Three: After 10 to 15 minutes, gently stir the peppers with your hands and then drain them 2 to 3 times. After draining, let them sit in a colander to remove any excess water.
Step Four: Once the excess water has been drained from the peppers, lay them out on a clean cloth to dry completely before moving on to the next steps.
Step Five: Choose a suitable pot and pour in 6 cups of water. Place the pot over high heat and bring the water to a boil. When the water reaches boiling point, add salt and stir until it dissolves.
Step Six: When the water in the pot begins to boil, turn off the heat and let it cool slightly. Once the water is lukewarm, add the completely dried green peppers to the pot. At this stage, you should use a plate turned upside down on top of the pot. This will ensure that the green peppers are fully submerged in the water and do not float on the surface.
Note: Be sure to pay attention to this point: if you add the peppers to the pot while the water is still boiling, they may lose their crunchiness and become soft. So it's better not to do this and wait a bit.
Step Seven: In this step, you need to take your time and allow the peppers to stay in the brine for at least 8 hours. After this time has passed, remove them from the pot and drain them.
Step Eight: In this step, you need to let the peppers dry again. Therefore, like in previous steps, place the drained peppers on a cloth to dry completely, ensuring there is no moisture left in them.
Step Nine: Once the peppers are completely dry, it’s time to put them in your chosen container. It’s best to use a clean glass jar for this. First, place the peppers in the jar, and then add the garlic along with tarragon and mint.
Step Ten: After adding all the ingredients to the jar, it’s time to add vinegar. The vinegar should be added in such a way that it completely covers the peppers. If the vinegar does not fully cover the surface of the peppers, they may mold, and the pickles will spoil. Another point to note is that if you want the vinegar to be less sharp and spicy, you can fill the jar halfway with vinegar and the other half with boiled water. However, make sure to use boiled water at this stage.
Step Eleven: Finally, close the lid of the jar and let the pickles sit in the refrigerator for about one week to 10 days until they are ready. After this period, your pickles will be ready, and you can open the jar and enjoy them with your meals. It's that simple!
