How to Make Gyudon

200g Thinly Sliced Beef With A Little Fat (0.441 lb)
1/2 Onion (130g/4.59 oz)
5g Ginger (0.176 oz)
2 tbsp Soy Sauce
1 tbsp Sake
1tbsp Sugar
1 tbsp Hon-Mirin
100ml Water (3.38 u.s. fl. oz)
1/2 tsp Granulated Dashi
2 Eggs
Beni Shoga - Japanese Pickled Ginger
Shichimi - Seven Flavor Chili Pepper
Scallions
Steamed Rice

牛肉:200gバラ肉か切り落とし用の脂身のある肉。しゃぶしゃぶ用の厚さ(0.2ミリ)がベスト。なければ肉屋さんにできるだけ薄く切ってもらってください。
たまねぎ:1/2個(130g)
しょうが:5g
しょう油:大さじ2
酒:大さじ1
砂糖:大さじ1
本みりん:大さじ1(なければ砂糖大1/2+酒大1)
水:100ml
和風だしの素:小さじ1/2
たまご:2個
紅しょうが
七味

I used this recipe to cook for five guys last night, and it turned out amazing! When I was living in Japan I was eating at Matsuya and Sukiya on a nearly daily basis, and I haven't found a decent place to get Gyudon in Chicago, but this recipe was perfect. My friend Will, who had lived for 5 years in Japan was almost in tears! This recipe is spot on! Thanks Francis!

When I first started making this recipe, I was living in a single room scraping by with what I could go by. Next year I'm taking my first flight vacation, with a friend house-sitting my new home. This channel definitely helped me with making sure I was well-fed through tough times.

You can leave out the onion but we recommend adding some vegetables to Gyudon. It will make the dish more nutritious and delicious :)

This is some crazy good stuff. I bought a japaese import microwavable gyudon bowl a few years ago and I couldnt believe how good this stuff tasted. The store stopped selling it because I was the only person buying so I learned to make it myself. I could eat this everyday. lol. I eat it almost everyday. The hardest part used to be finding bonito flakes to make the dashi

I made this for the first time since leaving Japan 10 years ago. IT WAS SUPERB!! I used to have the gyudon with cheese, so I grated some Dutch 'belegen' cheese, and its soooo good (much better than the cheese in Sukiya LOL). For the next time Ill make sure i have some togarashi.

Sake + Mirin + Soy Sauce + Sugar = Teriyaki Sauce (sold in stores) ... if can not find Sake and Mirin, you can try White Rum and White Wine ... obviously the tradicional recipe is the best.

Is it true that mirin = rice vinegar + 1/2 sugar and sake = Shaoxing wine ( around 1-2 Tbspoons)?

That is true when you cook the egg with high heat from the outside in, like in America and Europe. With onsen tamago, Japanese hot spring eggs, the eggs are cooked at a low temperature for a long time. Due to different chemistry, the egg yolk cooks at a lower temperature than the white, so the white stays very soft when the eggs are cooked in this way.

@Deeeefrog you can use sirloin or something similar...just look for a beef that has good marbling in it. flank steak or even top round can be used as well, just slice it thin and dont overcook it. like they said in the video, if the meat is semi frozen you can slice it easier. also check around for an asian grocery in your area, sometimes you can get pre-sliced beef used in korean recipes or like shabu shabu. i think you pay a bit more, but its done for you. hope that helps.

use Mirin... Mirin is a Rice wine. It's like sake, but it has less alcohol and its a bit sweeter. (Mirin is for cooking only)

@BloodrosePrincess its pretty much just poached egg. The one oka-san is using are free range eggs/native eggs that have a much more distinct, rich taste to them. btw what veggies do you add? ones that come to my mind maybe are sliced carrots and corn.

2019 and still the best and simplest recipe. So many “cooking” channels fuck the recipe so easily. This is the only one I trust with Gyudon recipe.

@K3vindust you can substitute dashi with chicken stock, and for the hon-mirin..i guess you could just use sake, but if you do, use more sugar..since mirin is essentially sweet sake

@ThePolkadog Hi, I am Japanese. You may use white wine instead of sake, and you might be able to use white wine with sugar instead of Hon-Mirin because Hon-Mirin sometimes translated as sweetened sake. We sometimes alternate Mirin and sake + sugar in our japanease receipe. Good luck in your kitchen!!

NEVER skip Dashi. It's integral to this recipe. I use Bonito Flakes and give the leftover flakes to my cat. She loves them. That's Recycling.

The sake breaks down into sugar to make it a little more sweet. Maybe you can add a little sugar to suit the flavor you want.

I substituted the Dashi for Oyster Sauce, it really gave it an awesome flavor. I added in a little more soy than it called for, I just toyed with it really.

@davidtj91 hon-mirin is a coondiment usually and commonly used in Japanese cuisine, is kinda like sake (is NOT sake) but sweeter and with less alcohol.

Eggs should be room temp, that's the single most important factor. If taken out from the fridge, it's likely they'll crack when you pour the hot water on. The water should be boiling as well. It will also help to have a clay bowl that can retain heat. Plain dishes lose heat pretty quickly. Getting eggs right is really hard - keep trying though!

Most Asian supermarkets would have these ingredients. It can be a Chinese or Korean market as well, not Japanese only. If you don't live near one, then there's always amazon.

For those in the US who can't find thinly sliced beef in the meat case: use Steak-ems (don't boil them, cook them in the shallow pan before you make the sauce then add them back near the end). Gyudon is meant to be fast food so I don't bother with partially freezing and shaving a real steak.

@NaithenandPiclas I find that quite surprising given the US has quite a large population of Chinese and Koreans. Any Chinese/Korean grocery should sell prepackaged thinly sliced beef. Its not sold at normal supermarkets here in Australia, but always in stock at any Asian grocery...

I don't think so because this dish is called beef rice. you can try ooyakodon which is with chicken and egg and tastes really similar to this. She has a video on it too

@gottaloveanime I will assume you are asking what you can replace the dashi and mirin with. If so, you can replace the mirin with sake and dashi with any stock (beef/chicken/veg) BUT, I will tell you the taste will be completely different than if you were to use those items. I suggest watching the ozoni soup video for making dashi so you can use it in this recipe.

She didn't technically boil it, she basically gave it a soft boil. The water was boiling when she put it in, but she did not continue to boil it. She let the eggs sit in water that was hot, but hot water doesn't stay hot forever, it eventually begins to cool, so the egg cooked just not all the way.

@yetson you have to make sure you put the tamago in a big heavy pot with the boiling water. Like... if you have a cast iron pot or an earthenware pot. A normal bowl or stainless steal pot won't stay hot enough =^.^=
