They say "Go where your heart takes you" in this case I went where my throat takes me! 😅 I enclosed my favorite flavors, LEMON and ALMONDS in one dessert! A velvety lemon cream on an imperceptible FROLLA base (it's so melting) thanks to rice flour, completed by a soft and fragrant ALMOND PASTA! What more do you want? An infinite pleasure!
I recommend it! Also excellent for those who cannot eat gluten, the pastry is made with rice flour, the cream with corn starch and the almond paste with almond flour, all gluten free!
Ingredients:
For the Shortbread:
200 g Rice flour (or if you prefer 00 flour)
2 egg yolks
100g Butter
80g Sugar
1 lemon
2 tablespoons of cold water
We prepare it and let it rest in the fridge for 30 minutes
For the Almond Paste
2 egg whites
180 g Almond flour (or finely chopped almonds)
90 g Sugar
1 lemon
Almond flavor and lemon flavor
For the lemon cream: ( 👉 • CROSTATA CREMOSA AL LI... )
500ml Milk
2 eggs
40 g Corn starch
90 g Sugar
2 grated lemons
Juice of 1/2 lemon
To complete:
Almond slices
Apricot Jam (for polishing)
