Pineapple Blueberry Loaf
1 3/4 C Flour + 1 Tbsp
1 tsp Baking Powder
1/2 tsp Salt
2/3 C Sugar
1 Egg
1 C Milk
1/4 C Sour Cream
1/4 C Butter - melted
1 C Crushed Pineapple w/juice
1 C Blueberries
Glaze
1 C Powdered Sugar
1 - 2 Tbsp Milk
1 tsp Vanilla
Whisk or sift the flour, baking powder & salt. Whisk in the sugar and set aside.
In a medium sized bowl whisk the egg, add, sour cream, milk, butter & pineapple. Mix well
Add the wet to the dry mixing until just combined.
Add the 1 Tbsp flour to the blueberries and gently fold in the batter.
Line or grease a 9 x 5 loaf pan.
Pour in batter.
Bake @ 350 for 45 - 50 minutes.
Let cake cool completely before glazing
To make the glaze mix everything in a small bowl until combined and drizzle over loaf
If you like thicker glaze adjust the amount of milk or add more powdered sugar to get
the consistency you like.
