Ingredients:
500g salmon (washed, cleaned, descaled, and cut into decent pieces)
Salt (for marinating salmon)
Fresh coconut milk (made from 1 whole coconut)
3 tbsp olive oil
1 medium onion (sliced)
1 medium-sized tomato (sliced)
1 tbsp coriander powder
Sea salt (to taste)
1/2 tbsp turmeric powder
1/2 tbsp cumin powder
1 raw mango (peeled, seeded, and cut into pieces)
Instructions:
Step 1: Preparing the Salmon
Wash and clean the salmon.
Remove the scales and cut the salmon into decent pieces.
Marinate the salmon pieces with salt. Set aside.
Step 2: Making Fresh Coconut Milk
Cut the coconut into several pieces.
Place the coconut pieces and water into a grinder.
Grind to extract the coconut milk. Fresh coconut milk tastes better and enhances the curry flavor.
Step 3: Preparing the Spice Paste
In a frying pan, heat 3 tablespoons of olive oil.
Add 1 sliced medium onion and 1 medium-sized sliced tomato. Cook for 4 minutes.
Add 1 tablespoon of coriander powder. Cook for another 2 minutes.
Add sea salt to taste, 1/2 tablespoon of turmeric powder, and 1/2 tablespoon of cumin powder.
Cook for 5 minutes, then turn off the heat and let it cool.
Once cool, transfer the mixture to a clean grinder and grind until it becomes a fine paste.
Step 4: Cooking the Curry
In a frying pan, add the spice paste and cook for 5 minutes.
Add the fresh coconut milk and cook for another 5 minutes.
Add the peeled, seeded, and cut raw mango pieces. Cook until the mango is soft but not too soft.
Add the marinated salmon pieces and cook for 8 minutes on medium flame.
Check the seasoning and adjust if necessary.
