Vegetable jollof rice:
Vegetarian friendly
To make vegan, simply replace the butter with oil of choice)
Ingredients:
3 cups rice (Indian gate sella basmati
1/2 medium onion
2 cloves garlic (minced)
3 cups tomato purée
1/2 cup tomato paste
2 teaspoons salt
Thyme
1 teaspoon curry
1 knorr vegetable seasoning pouch or better than bullion
1/2 pound Mushroom (baby Bella)
2 tablespoons butter
1/4 teaspoon each of salt, garlic powder, thyme
1 cup mixed vegetables - Seasoned with:
1/4 teaspoon each of:
Salt
Paprika
Thyme
Curry
Pepper flakes
