Ingredients
4 lbs whole chicken wings
½ cup olive oil
1 teaspoon salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon turmeric
15 habanero peppers
1 mango
15 garlic cloves
½ white onion
2 orange bell peppers (seeds removed)
½ teaspoon salt
¼ cup lemon
½ cup of white vinegar
2 tablespoons unsalted butter
Start by cutting off the tip of the chicken wing and discard. Cut the chicken in half, separating the drumette and the wingette. Wash the chicken well and pat dry. Using a large bowl, mix the spices, add olive oil and mix it well. Add the chicken wings into the marinade, give it a good mix, cover it with cling film and marinate in the refrigerator overnight. Preheat oven to 400 degrees Fahrenheit. Line a baking tray with aluminum foil, arrange the chicken wing and bake for 50 minutes. Halfway, flip the wings and baste as needed. Turn to broil at 450 degrees Fahrenheit, the last 5 minutes for browning, when done remove from the oven and set aside. Blend the ingredients for the mango habanero sauce and set aside. Place a pot on the stove, add unsalted butter, add the mango habanero sauce mixture, give it a good mix, simmer until the sauce thickens, stirring in between to prevent sticking. This process takes about 30 minutes. When done, add the sauce to the chicken wings and give it a toss, plate the wings, garnish with parsley and enjoy.
