No it’s just cheap sushi vs authentic sushi. More like compensating for the bad fish that they use. If you use enough sauce and other ingredients you can mask it completely. It’s the same comparison to authentic Neopolitan pizza. It’s super simple but quality of the ingredient needs to be super important for it to taste good.

I live in a 2nd tier US city and I can find Sushi that looks and tastes almost exactly what I found in Japan. The stuff found in Grocery Stores in the US is very similar to the Sushi you find in Konbini Stores. The Futomaki is probably the most similar to what American and Canadian Sushi Rolls look like. It is a complex roll that often has several ingredients. There are also large regional variants of Sushi, like in Kansai they have Box Pressed Sushi, which is different from the Nigiri.

A key difference is most Japanese restaurants are not run by Japanese and their staff has not even been propertly trained in Japan or just by Japanese chefs.

This. That’s also why they can’t make good nigiri because the fish is usually terrible. Also try ordering any other Japanese dishes other than sushi. They’ll butcher it completely.

@@linuxman7777just because they have nigiri on the menu doesn’t make them good. It’s so simple so the quality of fish has to be very good and the rice needs to be cooked and seasoned perfectly. That’s usually not the case with 90%+ sushi restaurants in the US.

Very entertaining video. However; some points on you video is questionable. Japanese sushi is not “fresh“ from the ocean on the same day. Fish is “aged” in order to get more flavor and texture, like a dry aged beef. Tuna goes bad really quickly after it is catch, so that is why they quick freeze the fish in order to preserved it and sell it. In the video, you can see all the Tunas in the fish market has an icy surface on it. That been said. If you catch the fish in the morning and serve it in the same day there is something called rigor mortis. The flesh of the fish become stiff almost chewy, something that Japanese don’t like it on a piece of sashimi (raw piece of fish). If you want the “freshest” , try Korean raw fish. They have fish tanks in front of the restaurant and they serve it right away. Well that is another rabbit hole to explore. One RU-vidr explains the different between Korean and Japanese raw fish very well. His channel name is Off The Menu

I remember someone brought a salad with fresh salmon to church and a little while later there where worms popping out of all the meat. Sushi would get a really bad reputation in America if worms started popping out. Not everywhere in America are people located close to the fishing industry unlike an island country like Japan. I have also heard the Wasabi helps kill the worm eggs as does the soy sauce. This along with freshness makes it safe in Japan which would not necessarily be true in America.

Maybe he/she using Pacific salmon which notorious for having parasite in it flesh if not properly freezed to kill the parasite. Atlantic salmon in other hand is parasite free especially farmed one's, that's why salmon sushi is practically unheard before the 90s before Norwegian introduce parasite free Atlantic salmon to japan.

I don't see an issue with it at all. Foods get localized all the time the Japanese themselves are the MASTERS of this, so why they would care is beyond me. I hate a sterile and boring world, and if your sushi has mayo or cream cheese or beef or sweet mango sauce, more power to you! I think there's plenty of room for proper Japanese sushi and the Western and Latin American variants.

All 3 reasons boil down to one reason: supply chain and logistics. Having fresh, affordable, readily available ingredients makes all the difference. If it's affordable, you need to fill it out with cheaper ingredients. If it's fresh, you don't need to hide the taste with sauces. If it's readily available, you don't need to make it Instagramable, people know what quality ingredients and will judge on taste more than looks. Also, my uncle opened up a sushi restaurant alongside his Chinese restaurant. Honestly, he doesn't care about sushi and has no business trying to serve it. But it's a lucrative market and Americans don't know better.

I have no problems with adapting / modifying foods to meet local taste. I think some of the American sushi makes sense…and other American sushi is extremely weird and doesn’t make sense. The cream cheese is way too strong and you end paying a lot of money for sushi where you can’t even taste the expensive ingredient, the raw fish. A little “sauce” (mayo) makes sense but some of them are lathered on in high amounts you have the same problem as cream cheese - you can’t taste the raw fish much and thus paying Mostly for the taste of rice and sauce. My favorites are the traditional Japanese style or when they just add avocado or a cucumber to a traditional sushi roll. The spicy mayo on them is really good so long as they don’t put to much.
