RECIPE:
For the boba:
2 Tbsp water
1 Tbsp brown sugar
1 + 4-5 Tbsp tapioca starch
Black food coloring (optional)
In a saucepan on very low heat (DO NOT PREHEAT), combine sugar and water and stir until sugar is dissolved. Mix in 1 Tbsp of tapioca starch and increase to medium low heat. (If it gets lumpy, your mixture was too hot.) Watch the mixture closely, it should start to become sticky. Stir it, and if it is getting sticky, mix until the mixture is completely sticky. Take off heat and fold in rest of tapioca starch until dough forms. Pour onto cutting board and start kneading. Add tapioca starch until the dough is no longer sticky. Knead in food coloring (optional). Roll into pearls that will fit up your boba straw.
Coat in tapioca starch to prevent sticking, and shake off excess before cooking.
Bring a pot to a boil, add in your boba. Stir until they float. Once floating, lower heat to low, cover and let cook for 10-20 minutes. Remove from heat (still covered) and let sit another 10-20 minutes. (10 if smaller, 20 if larger) Check your boba, if they look like they have large cores in the middle, let them sit in the hot water longer. Drain and rinse boba in cold water to stop the cooking process. Add honey or other sweetener to boba pearls.
