Hello! So many people have asked on Tiktok, what do I do if my boba dough turned into oobleck? Well today, I'm going to show you exactly what went wrong and how to make perfect boba dough! The first time I made boba, I thought I followed the recipe exactly, but still ended up with oobleck. Now I know what I did wrong. Additionally, I'll also show you my lazy milk tea recipe. RECIPE:
For the boba:
2 Tbsp water
1 Tbsp brown sugar
1 + 4-5 Tbsp tapioca starch
Black food coloring (optional)
In a saucepan on very low heat (DO NOT PREHEAT), combine sugar and water and stir until sugar is dissolved. Mix in 1 Tbsp of tapioca starch and increase to medium low heat. (If it gets lumpy, your mixture was too hot.) Watch the mixture closely, it should start to become sticky. Stir it, and if it is getting sticky, mix until the mixture is completely sticky. Take off heat and fold in rest of tapioca starch until dough forms. Pour onto cutting board and start kneading. Add tapioca starch until the dough is no longer sticky. Knead in food coloring (optional). Roll into pearls that will fit up your boba straw.
Coat in tapioca starch to prevent sticking, and shake off excess before cooking.
Bring a pot to a boil, add in your boba. Stir until they float. Once floating, lower heat to low, cover and let cook for 10-20 minutes. Remove from heat (still covered) and let sit another 10-20 minutes. (10 if smaller, 20 if larger) Check your boba, if they look like they have large cores in the middle, let them sit in the hot water longer. Drain and rinse boba in cold water to stop the cooking process. Add honey or other sweetener to boba pearls.

For anyone trying to salvage their oobleck- I added a small ball of the failed batch to some more sugar and water got it to the gelatinous stage, then added in the rest of the batch. Took a while kneading but was able to save it!!

i did this!!! u had to add some of the oobleck to the sugar and water and stirred it for a while on medium heat until it started sticking. then u added more and more until I dumped it onto a cutting board and kept adding in. ur literally the best

this is actually so good mine was like oobleck and what i did is i made more sugar and water and then added 1tbsp of starch until it gelatinised then turned the heat off added the oobleck in and mixed it then added a lot more starch, mixed it in and kneaded it and it was saved

Thank you so much for the help! It’s my second time making boba, and for some reason this DIDNT happen the first time I made my boba, even though I added the tapioca in wrong. Needless to say I was pretty confused and worried when this happened to me today 😅

This was so helpful and I didn't know there would even be a video on this issue. My second time making boba and tried it in the microwave this time and it came out like this. I was so bummed and as many times I added more Tapioca it didn't get anywhere. I wish I could have kept the dough and experiment on saving it, but it's ok. I'm so glad you made this video!

@@jx5b7 Oh I see! So when you add the tapioca starch and you mix it in, take your mixture off of the heat. Then when it's nice and mixed, then you can put it back on the heat.

my dough was like between oobleck and between sticky so i added water to the pan and the dough on medium heat and it worked so well

Sounds like the heat is too high! I recently switched to doing the microwave method for making boba since it's easier and tastes the same. If you do have a microwave, I recommend watching some of my newer boba videos to see how it works. If not, turn down the heat on the stove 😄

How long can you keep it uncooked and how do you store it? I was hoping I can make it ahead of time for a party

After shaping, shake them in some tapioca starch to prevent sticking, then seal in a bag. They stay good for a couple months this way! Then boil and serve when ready. You may need to add more time to the cooking time, just be sure to check the texture of one before dumping the hot water. 😊

Hey I reaaaaaaally need some help with my boba batch. I have done it one time it turned to oobleck but I saved it after I made a ball and my mum saw it and she said it can work soo that was pretty good, but right now I made a batch but as soon as I put them into water there just sunk into the middle like the boba itself was sunken into the centre, I don’t know what to do at this point😢

Hi! Are you using my measurements or another recipe? Too much sugar can cause them to shrink or melt. When making the boba, make sure you avoid oobleck dough by cooking until it is a sticky blob before adding the rest of the tapioca. If you have a microwave, it is easier to cook in there! Check out my most recent boba vids, I use the microwave method.

Yes! I actually do this all the time on our Tiktok and Instagram. You can add blended strawberries (or any fruit) when you mix the water and sugar. You might need a little more tapioca starch. You can also make it into any shape you want or add dye for color. :)

Hi if you see this I came here from tiktok, and the part I’m talking about is when I try and mix flour in it’s too sticky and then when I roll it they turn out very lumpy but maybe if I do the cutting technique ir may work better!

You can keep adding in more tapioca starch until it is less sticky. :)

hey i'm back i tried making tapioca pearls again but when it gelatinised it looked like clear a bit and i thought it was normal and then i added the rest of the tapioca starch and it had this soft texture like mochi, it wasnt really a dough because your one looked opaque and you could put it into balls while mine just like disformed after like 2 minutes

Huh, I have never run into that issue before! My recommendation was going to be to knead in more tapioca starch but you already mentioned trying that. So I'm honestly not sure! My next recommendation would be to try the microwave boba method if you have a microwave. I don't have a video on it yet, but others do. I'm sorry I wish I could help more!

Nope! You only need to cook longer If you made the boba bigger in size. :)

No. There are some recipes online that say you can, but it's doesn't really make traditional boba. The texture is completely different. I would check if you have any Asian or international markets near you to buy from. If not, they sell it online. 🙂

I'm not sure if it can be saved! You could try putting it on low heat with a little more water. Then cook it until sticky and add more tapioca starch.

I tried to make boba , it turned into oobleck the first time. I watched your video and I attempt a second time and the dough was hard like powdery rock sugar . Did I cook it too much !

Yes! Try to keep it on a VERY low heat. Only bring it to a low medium when trying to get it sticky. Once it is sticky, remove from the heat then add in your 2nd bit of tapioca, to be safe, add it a little at a time. If too much water evaporated you might not need the full amount. Hope this helps! :)

The rock sugar part leads me to believe you cooked it too much so the sugar hardened. Keep on a super low heat! :)

Hi! I do a better job explaining it in my more recent boba videos! Usually I start it very low, then once the first bit of tapioca starch is mixed in, I'll turn up the heat a little to like a medium/low. Once it becomes sticky and gelatinizes, turn off the heat and add remaining tapioca starch. When boiling, add the pearls and wait until they float. Once floating, turn the heat to low and cover. After the first 10-15 mins, remove from heat but still let sit in the water for another 10-15 minutes. I hope this is helpful!

unfortunately it needs to be tapioca starch! But I know other creators have tried by using corn starch or rice flour. You may want to try looking up corn starch boba recipes on youtube.

I add 1 Tbsp first, then add an additional 4-5 more Tbsp! If it is sticky add even more. My other videos have boba recipes too, I hope this helps!

Great question, but I wish I had a good answer. To be honest I'm not entirely sure! I'm wondering if you could microwave the dough for a little then add more tapioca starch after. This is something I want to experiment with to avoid waste.

Thank You So Much….. I tried making Boba about three times & each attempt was a disaster. The last time was extremely rock hard & crumbly. I tried to revive it ( Tapioca Flour is expensive) by adding more warm water. Then it became a sauce with rock hard crumbles or candy. I was so annoyed it went straight into the trash. I also was annoyed because as I stated that type of flour was very expensive. Next time I will try this. Buttttt Wish Me Luck…Thanks again.

Making boba can be so tricky! It may have become rock hard because the sugar in the recipe overheated. If you have a microwave, you might want to consider the microwave method! mine is being really weird, the dough looks great just like urs but when i boil it it like, disintegrates? the balls unform and it turns into a giant boba goop it's so upsetting do u know what's wrong?

Oh that's strange... Are you using my recipe or someone else's? I used to have a problem with disintegration when I added too much sugar to the dough :o That it maybe cooking too long? How long are you cooking it for?

Can someone please help me with this. I've followed the video fully, but I got oobleck again. I'm so frustrated with it, because first time I made it, it was perfect, and now 3 times in a row I keep getting the wrong thing. I checked out this video after 2 ooblecked attempts, and when I started making it today it looked right, however when I started kneading it turned to oobleck again. I tried melting a portion of it as I saw in another comment, but that didn't help much, and then I melted it all and got it into the gelatinous consistency. I did manage to make boba from that, even though it was hard to work with, but I'd really appreciate if anyone has any tips on how to avoid this long and frustrating process. The video did a great job explaining it, I'm just confused on where I went wrong.

That's strange! Be sure once you get your tapioca to gelatinize, be sure all the liquid goes away, so it is entirely sticky. If you have a microwave, you can also check out some of my newer videos where I use the microwave instead. Getting the tapioca mixture to be gelatinous before adding any more starch is crucial! Without gelatinizing, the consistency will be oobleck. I hope this is helpful!

It's so tiring no matter what I do it becomes oobleck or just doesn't become sticky i don't know what to do 😭 it was good only once 1 attempt of 8 I stir it but it's still doesn't become like slime I don't understand what's happening I will try my first recipe again with white sugar and cacao powder I hope it will work.

Is it lumpy as in the tapioca starch won't mix in nicely? That could mean your heat is too high, try lowering it.

@@easyastry I'm actually wondering if I'm using the correct ingredients. The starch is very coarse, so when adding it in it just doesn't incorporate into the sugar and water well. I definitely put in too much starch though

And I’ve tried three times. It gets gummy. I add tapioca flour and it didn’t stick together. Still crumbly mess :(

@@eswing2153 Your dough may be getting overheated. By chance do you have a microwave? This is an old video, nowadays I use the microwave method for the dough because it's easier to avoid overheating. If you watch my newer boba tutorials, I use the microwave method. If not, try a low heat, don't preheat the pan, I hope it helps! If it makes you feel any better, I've messed up more batches than I could count when I first started. It's definitely not easy! 😄

@@easyastry I don’t feel so bad now. I managed to salvage one of the batches by wetting my hand and adding moisture that way. It kinda turned into a dough similar to play-doh which looked a bit like what you have. The dough never became stretchy though. Maybe I let too much moisture out while cooking. Is it supposed to be like honey or slime in texture?

So when it gets to that state, you have to start over and make sure the heat gelatinizes the tapioca starch. Sorry I realize that can be misleading! Something you can test is to add more water and sugar so it's more liquidy, then heat it until that gelatinizes. I haven't tested this out but it might work!

If it isn't becoming sticky, try increasing the heat just a little bit and let it sit for a minute. It should start to get sticky!
