That is true, but "including stir-fraying and braising meat" is a kind of modifier in this case. It modifies (describes) the noun "uses." And that's not a situation where you want to use a colon. Here is an alternate version of the sentence where it would make sense to use a colon: "The wok pan has many different uses: stir-frying, braising meat, and reheating leftovers." The rules are similar when it comes words/phrases such as "like," "among them," and "such as." "The wok pan has many different uses, such as stir-frying, braising meat, and reheating leftovers." "The wok pan has many different uses, among them stir-frying, braising meat, and reheating leftovers." In a sense, the colon has a similar kind of function to "including" or "such as," so it is almost redundant to use both. However, it would be possible to use a colon in a case like this: "The wok pan has many different uses, including the following: stir-frying, braising meat, and reheating leftovers." A little awkward/wordy, but still not incorrect.
