Hope you enjoy this video! Unfortunately no Premiere with this one as it was technically already Premiered a month ago but got hit with a copyright strike and didn't get cleared until now. I didn't realize I couldn't "Re-Premiere" this video until just now so I'll be sticking around the comments section for a bit!

I was hoping a bit more response from you regarding the different customers. The one who couldn't name one dish he ever ate from the Chef and was just eating for the status, the pretentious foodie (Tyler), the critics (even more pretentious), the celebs who wanted to be seen, etc. I would imagine you experience the gamut, and they had them all in one room. And the frustrations that go with each. Also, you briefly touched on the avant garde, but I would have enjoyed more. A breadless bread course? Still, I liked that you attempted to tackle this movie. I imagine it is difficult to critique and comment in a RU-vid video.

Fun fact: They used actual chefs and wait staff from real restaurants to play the roles and the main chef was coached by a real chef on how a kitchen works

I spent 4 years in culinary school and then almost 5 in the restaurant industry. Executive Chefs can be brutal. I admit now that I've had a lot of years out of the industry that even though for a bit of time I wasn't even legal to buy my own booze I drank and cried alone at home after work. The industry took a lot of joy in cooking and food away for me. BUT happy ending I found my happiness and my joy in food and cooking returned. I have a lot of respect for people who last decades because it is a hard job in so many ways. I'm happy to hear that the toxicity of a lot of kitchens has gone by the wayside because in the end a good but tough mentor and environment is what is best.

From the original script: Lillian wasn't completely exaggerating when she said she put Chef on the map: He had another high end restaurant before Hawthorne, called Tantalus. Got 2 Michelin stars 2 years in, then closed up shop. Isn't heard from again until 3 years later, running a taco truck in Portland. He agreed to the interview only if he could keep his privacy, his own land, and it had to be by the water so he could source his own fish. It's established the movie star has a peanut allergy during the tour, and this turns out to be setup for the menu's eighth course, where Felicity is ordered to force feed him a dish completely comprised of peanuts so as to kill him through anaphylactic shock. Anne (wife of man who paid Margot to look like his daughter while j*cking him off) actually couldn't eat The Island as is due to a shellfish allergy. Hers was salmon. The broken emulsion gag escalates to where the servers literally waterboard Lillian with it. The restaurant has hidden cameras in the dining room, so even if Elsa missed something, it still got caught. The taco truck Chef was running was, according to him, the happiest he'd ever been, but Margot call him out on it later, asking why he parked his truck at a Food Expo where he KNEW food critics were going to be, if he wanted to be left alone. Man's Folly was supposed to have more details about a woman chef's actual experience in the kitchen, from harassment to stereotypes. The women DO get bread with Man's Folly, and it IS as delicious as promised. You can even see Tyler chewing on bread when Chef comes up to confront him afterwards. Not only did Tyler bring Margot knowing she would die, he sincerely thought Chef was going to spare him. And even when called out on it, he STILL didn't apologize or take it back, because all he cared about was experiencing the menu. Them all coming to the kitchen to watch Tyler screw himself over wasn't originally in the script. They were just supposed to watch from the dining room. Margot makes another bid for her life before being ordered to go get the barrel. Which Chef appreciates enough to tell her so. Margot smiles upon seeing Tyler's hanging. Lillian realizes she's never going to get to write about this last experience, and THAT ends up being her real just desserts. Instead of dropping the ashes to set it all on fire, Chef originally drops a match. The last scene is of firefighters combing through the burnt wreckage, and the very last thing we see is the one photo of Chef as a young man, flipping a burger, but happy.

Tyler is the fanboy who watches from afar and thinks he knows more than those who actually work in the field. I think there's nothing wrong with trying to learn from a distance, and that believing you should look down on those who want to enjoy the hobby because you have the practical experience is wrong, but Tyler took it to the extreme like most people in this movie do. Both critics have to be pretentious to keep their image regardless of the damage they cause, the regulars just like the prestige but never savor the experience, the actor tries to be relevant, and the finance bros just like feeling like they're in power. All represent the worst side of people in any form of circle. Chef Slowik is no different and is as much of a monster due to losing his passion, but being as pretentious as Margot/Erin claims he is, which he can't really debunk.

Perfect burger Ground chuck or Ribeye, marinated in Worcestershire sauce, seasoned with montreal steak seasoning, seared in a cast iron skillet with a little olive oil and onions (sweat or caramelized I prefer the latter), served with the onions, american cheese, and mustard on a toasted and buttered sesame seed bun. But I wanted an appetizer. I ordered chicken strips. I thought it would be 3 or 4 strips. NOPE. 12 and they were huge. I was so shocked. Happy. But shocked. Two smashed patties with that nuclear yellow american processed cheese sandwiched in between typical light and slightly sweet Pinoy buns toasted with some butter on it, resting on a bed of mustard-mayo-ketchup sauce. For me, my ‘perfect cheeseburger’ has to be two half-pound patties, caramelized onions cooked with the burger patties, one or two leaves of lettuce under the patties so when I press down a bit the juices don’t soak into the bun and make it soggy but gather on the lettuce like a cup and just add a bit of pure meat broth with the first bite, two slices of Colby Pepper-Jack (literally just Colby-Jack and Pepper Jack mixed together) for that slightly spicy kick, sliced and cooked mushrooms, some extra-crispy bacon and a tiny bit of hot honey barbecue sauce, all sandwiches between two buttered and toasted brioche buns. Savory, spicy, a tinge of sweet to cut through the fat, it’d be enough to put me to sleep. Pair it with some chips or fries and that’s my meal for the day, bar none.

Man, I know that you're reviewing a movie. It's fiction. But... the way the two of you are like, "It's pretty much like that" and various other things I've seen of kitchens behind the scene... I don't understand how ANYONE actually does it. Like, damn, just... It sounds like hell. Just pure hell. And, like, I've already once in my life turned my passion into my day job and I realized that my passion wasn't my passion anymore. I had to go find something else for a hobby because it was now, basically, dead to me. So, how anyone goes into a kitchen and doesn't come back out a couple months later just loathing food entirely... It's beyond me.

It's a LOT more than that, and that's what really makes it better! It's a story that most every single chef(and even non-chefs) can relate to, but twisted and turned up to 11 to the point of murderous hyperbole! The dishes reflect the part of the story we're at in a very direct yet still artsy way.

Most people who say this have no idea about the actual food scene. Only social media wannabes are impressed by nonsense food. I went to Alinea in Chicago. One course they take you down into the kitchen while they reset the tables. Chef Achatz always likes to have something tricksy on the decor. Our tables had fruit bowls, and they pouted dry ice in, so during one course the whole room smells like a tropical island with this fruit scented mist flowing all over. It's fun, and they needed to swap the bowl out. You see the kitchen is working, and you see how they're making the food. They served us a cocktail using an old manual ice grinder, and a pizza roll. Not a deconstructed pizza roll. Not a take on a pizza roll. Just a gourmet pizza roll. Like they fried cheese to make the "dough" so it was crunchy and cheesy and perfect. The Michelin guide is also giving top ratings to food hawker stalls across the world now. It's not about ostrich tears cooked in quail memories served for $3,000. It's about your food being fresh, seasonal, and consistent.

Oysters and lemon mignonette - Common flavors put together that have to be broken down and deconstructed, foreshadowing what happens to the guests. This is meant to be taken as Chef throwing down the gauntlet. Amuse Bouche - More foreshadowing. Charred lace - crater. Milk snow - ash from the fire. Cucumber and melon - the guests. The Island - Scallop on a rock - Chef presenting himself to the guests. Plants - "in the weeds" Breadless bread plate - straight up snarking at picky customers. But you can also make a case for Lilian's plate having a broken emulsion on purpose as his way of saying SHE'S as useless as a broken emulsion. Memory - Self explanatory The Mess - Pressurized vegetables - literal pun. Bone marrow - blood. Beef jus - sweat. Potato confit - tears. Man's Folly - Plum vinegar exists because of Umeboshi, whey plays a vital part in making yogurt, sea kelp and lettuce are what keeps the oceans biome from wreaking havoc. But everyone either doesn't know that or forgets, because they don't taste good, aren't as attractive, or can be very difficult to work with in their natural form. It's the same with women, especially when they try to speak out against unfair treatment like what the chef describes. They get called things like "bottom feeders", like crabs. Final scene with Margot/Erin eating the cheeseburger - She didn't care about giving him peace of mind. She just wanted to survive. And Chef acknowledged that. Using his menu as a napkin - She never believed anything he said for one second. She is, in fact, a taker that knows her worth. And that's why she lived.
