Fun fact: the whiteness and brittleness that old chocolate gets is called "bloom," and you can entirely get rid of it by melting the chocolate and waiting for it to solidify again. It'll totally taste fresh again.

the white part on the chocolate is just as time passes and temperature fluctuates, it slightly melts and hardens over and over and the fat separates and goes to the surface. That's why old chocolate is hard and crumbly: the fat is used to make it softer and more cohesive!

There's two different blooms that can happen. The first is exposure to heat which separates the cocoa butter and fat content of the chocolate and brings it to the surface, which will give it an oily fatty deposit in that white color. The second is exposure to moisture which draws out the sugar content to the surface and leaves a powdery white surface. The chocolates in this video appear to have both. On a different note, chocolates can indeed go bad depending on the ingredients used. Sometimes oils are added, and they can go bad and give an expired chocolate a kind of bitter aftertaste, not unlike the taste of a bad beer. Source: Worked in a high end chocolate shop for several years and needed to learn and know these things so that we could sample out chocolate here and there to make sure that the batch hadn't gone bad in any of these three ways.

They'd probably just turn the color of the dye....depending on the kind of dye lol. Manic panic, Joico color intensity, punky color, Arctic fox, raw, would likely just dye it the color of the dye. Something like a box hair dye that has developer might be different but the developer wears off after a certain amount of time. Leaving things in hair bleach would be cooler imo
