Amaranth leaves is highly nutritious and iron rich veggie makes a very healthy stir fry and serve with some steamed rice or roti tastes delicious. This is a very simple stir fry and the only time taken is to clean the leaves.

Ingredients:
Red shen choy or Amaranth leaves - 1 bunch (about 500gm)
Onion - 1 medium( chopped)
Garlic - 3-4 cloves (chopped)
Red chilli - 1 (broken)
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt to taste
Jaggery or sugar - 1tsp
Fresh shredded coconut - 1/2 cup
Oil - 1tbsp

In Bangla it is called 'data shak' ( green leaves) when young; when grow further they become tall eatable sticks ( data - 3 - 6 ft). The other variety is called 'lal shak' ( red leaves), they are eaten when young only ( 8" - 12 "). Very popular veggies. I grow them a lot in summer here in Melbourne.

Adding coconut and jaggery makes it taste sweet,doesn’t it? In the Middle East(Lebanon) we have a similar plant we call khobayzé,and we cook it in a similar way but only adding garlic and onions,and usually we add on it lemon juice when it is done and eaten with pita bread

No, it won't be sweet. It balances the flavor. You can make garlic onion also. Sometimes I do the same as you said. All are slightly different taste. Enjoy variety!!

Do not throw that stems. Cut them into small pieces and add to the recipe. Highly nutritious and source of fiber.
