⭐️ I have roots in Bulacan, Bulacan. I do remember much of that fiesta fare, especially the unlaid duck eggs. We do that with chicken too as they get older and less productive. A final offering. Yes, everything is free range. I had never seen chicken farms; only chicken coops until it became the way of raising chicken through large corp. We’re proud of our Bulakeña heritage.
My lolo was born on January 1. So we’d have a grand birthday party. It involved musicians and poets coming over to present their pieces. It was called Balagtasan.
I wanted to yell "Murder!" at the sight of Gotong Batangas in Bulacan, because that does not happen. But when Chef Gene showed the banana leaf-wrapped rice, called Balisungsong, I immediately calmed down and thought, "Yep, you're in Bulacan, alright." I hope you enjoyed the trip to my home province :)
