Too many to choose from, but for veg, chole batura, mail kofta, paneer butter masala, masala dosa, yellow dahl, aloo gobi, veg biryani, Bhindi masala, okra fry, gobi 65, sambar (there is many styles, so try a few out to see what you like) and dosa, eggplant fry (south Indian style) non-veg, lamb curry, rogan josh, butter chicken, tandoori chicken, Hyderabad biryani, laal maas, Goan vindaloo (pork, lamb etc), chicken curry (South Indian style), Kerala fish curry (the dark red one!), Fish Fry, lamb or any meat fry (Kerala style), Keema, Kerala chicken roast, chicken 65!, appam and chicken curry (Kerala style has to only be eaten fresh), chicken Chettinad, Kerala Perrotta and chilli meat, pork rib curry(South Indian), I have not tried much from NE India, I know they have momos and flat noodle items. Please tell me you visited the golden temple, Akshardham, Lotus temple, Ranakpur Jain Temple, Gomateshwara Temple, Sardar Patel statue, Palitana Temples, the pink and blue city, Khajuraho, sun temple(Orissa and Gujarat), Ellora, the Taj, Mahabodhi Temple and the churches in the south. There are several waterfalls. Oh and Goa on its own is like a vacationers chill-out spot.

@@FollowMeImaFoodieIndia Aloo Posto is Potato with poppy seed paste, there is no Cashew and fry potato. It goes well with plain rice, I am first time saw someone love it with Paratha, pratha has its own taste and that overpower posto taste. Posto taste very smooth and light.
