I wired a 500W pure sine inverter to my alternator and mounted it on the doghouse of my van. It charges my Jackery E1000 as I drive. I have a portable 200W solar panel to charge the Jackery when I'm stationary for a while. The Jackery can power my refrig and my induction cook top for 4-5 days from a full charge depending on how much I cook and how cold or hot it is. (refrig requires less energy when it is cold out) My opinion: don't mount a solar panel on your roof and ruin the aerodynamics. You probably want to park in the shade to keep cool, while you set the panel out in the sun. With an inverter charging everything up as you drive, you only need the solar panel when you are parked for a while.
Think about adding a Maxx air fan or a Fantastic air fan. I believe they're only 12 volts and run it off a solar panel or your battery That depends on what type of electrical power you going to do. The fan will help with the circulation of air and just a small opening on your windows I'll keep it nice and cool and help with ventilation if you have to get a small heater to keep warm. Nice diy build in 11 days. Im 5'5" wife 4'10" & would definitely hate having a stiff neck & back being a camper so small. I can only imagine the hell you & fiance go through being so tall. You two definitely need to add a pop up.
The design is good and the size is appropriate , but one thing that seems uncomfortable is that the ceiling is so low that it will be much more comfortable to raise the front and back a little more...
Nice lil truck camper i bet my wife n i could sit on the side n not hit our head we r only 5'2" tall. Might wanna turn my tacoma to a camper one day when those kids r older then we might shrink to 5' tall.

I think this is a great build, hard walls, comfortable bed, and you can literally be from truck seat to sleep in two minutes. Builds are personal, and one build with all of the bells and whistles, simply won't work for someone else. I live in bear country, and the idea of having my food and cooking stove separated from my bed by a piece of plywood, or some composite panel, does not work. Well done.
