My theory with the fruit man is that because he has a all raw fruitarian diet. That there is a part of him that craves those things like bread, meats, butter, etc. And that make him try to pick out flavors in the fruit that are just hints or not really that close because of his internal longing for cooked/prepared foods.
As an Asian, I feel heavily disrespected of how he ate the jack fruit. You eat jack fruit, by eat the pieces with the seeds inside you peel it out and that’s the flesh you eat, real description of it, it tastes sweet a bit chewy, and a bit like there’s a perfume in your mouth I think I haven’t tried in a month.
