Does Bread Dough / Yeast Need Sugar To Rise?

Today isn't so much a recipe as it is an experiment! I always thought you needed to have sugar to go along with yeast to act as the food for the yeast to eat, but is that actually true or is it just sweet sweet lies?!

Thanks! Yeah I thought so too. But seems like more color from the sugar but the rise seemed very similar!

Nice topic , well explained that i try to explain people but they don't understand.... I don't add sugar in my yeast dough and it rise perfectly n very well ...i make bread loaf , cinimon rolls, Buns, pizza so much dough without sugar all turns perfect, some recipes are on my channel too .

A friend pulled me out of my managing position at a pizzeria to help him start his own. Pizza is coming out great but dough is not consistent and we'd be wasting time having to deflate the dough twice a day! This didn't happen at Marco's!! (Yeah, they have good pizza but they use the cheapest ingredients, just like everyone else, and the fake food can be tasted! ...that might just be me.) Today I made my first no sugar dough to see if that makes it more consistent. I'll see how it looks tomorrow. Thanks for the video!

This was such a great episode! I've always added sugar to my yeasted recipes, even though deep down I know it doesn't do much. Baking superstition, I suppose. I'd be fascinated to see (or try it myself) the difference between active yeast and instant yeast.

@@Passionforfoodrecipes I’ve never officially tested it, but I think instant yeast can just be added to the dough and (generally) active yeast needs you to, well, activate it with warm water.

This was really fun ! I never really thought about this. I’m glad you tried it on two different recipes. Though on the rolls, it does look like the ones with sugar did brown on the bottom and top differently. Now I’m thinking about all my breads, do I always add sugar ? I think I do.

Yeah that's one thing it does do sugar aids in browning! I mostly didn't mention it in the video because the sugar ones also cooked slightly longer so kind of a double extra browned 😂

Nice! That's what I was thinking but I had fear I would waste my bread. Now I will make the cleanest bread: Water, flour, yeast, salt. I tested it and oil doesn't make a difference in bread neither! Thanks to you from now on I don't even need sugar in my kitchen anymore this was the last thing on my list!

you add sugar you burn the yeast out prematurely, salt is added first for flavor but more importantly to control yeast growth a literal pinch of sugar in a bowl of 110º water with yeast will tell how good the yeast is, sugar is only use by myself to test yeasts viability...

Yeast cannot break down carbohydrates into sugars. Flour breaks down carbohydrates as soon as water is added. Enzymes in the flour will do this and create sugars. So no need to add sugars.

Thank you so much for this demonstration! Have you ever tried other flours for those of us on AIP diet or Keto diet? Like Cassava flour or Tiger nut flour or coconut flour or any combination of those three? Thanks again for this information!

In you video u seem to use 2 attachments when mixing the dough. Do you use the beater first before the hook everytime?

I usually only do that when it's a small amount of dough, the hook by itself takes a long time to bring the dough together when there's not a lot in there

Ive been thinking about making a no sugar recipe and brushing a generous amount of garlic butter on the pan and the pie to help with browning since butter contains whey and also acting like a vapor barrier. What are your thoughts on this?

Yeah butter should help you get crisper crust at least, I don't know if that would aid in the Browning of the top or not though 🤔

@@Passionforfoodrecipes so I did try it. The recipe I used was 2 cups '00' pizza flour 1 cup warm water 1 tsp instant yeast 1 tsp salt 1 tbsp apple cider vinegar Proof pie for 3 hours on the counter. Brushed pan and pie with garlic butter and baked at 425° f for 25 minutes. Honestly it worked exactly as intended. The dough was a nice golden color with a soft crumb and very crispy crust
