She's Omoni (mother) even if she's not your mother (maybe she doesn't even have children, but it's a respectful way to refer to her) About the ages, you normally call someone up to 10 years older than you Noona/Unnie Hyung/Oppa. People over 10 years older than you can be Imo (auntie) Samchon (uncle) Ahjumma/Ahjussi (those can also be applied to middle age people) and then there's the respectful way to refer to older people as mother and father.
