Colocasia is the most popular leaf vegetable which grows everywhere in Goa during monsoon. there are varieties of colocasia grows in this season. this curry is must try a recipe in the rainy season. there are many ways to prepare colocasia curry. commonly it is prepared as veg and non-veg. not with meat or fish but just with the difference with onion and garlic in it. since this is sharavan month I am making one without onion and garlic.
take freshly picked colcocasia. normally while preparing its better to apply any oil or tamarind or cocum petals to hands. colocasia is slightly itchy in nature.
Cut/chop colocasia leaves and stems. keep it for boiling. it needs to be really cooked well to get the proper flavor.
for curry masala, I have used grated coconut and garam masala powder.(Garam masala can also be replaced with khada masala.) roast grated coconut with coconut oil before grinding.
The main key combination ingredient in this curry is Hog plum and Cocum petals. The sourness of these two ingredients helps to balance the itchiness of colocasia.
Add soaked peanuts, white peasand jackfruit seeds with this Hog plums, and Cocum petals while colocasia is boiling.
for additional flavor, I have used fried Kuvalyacho vadyo.
add grind masala curry paste when everything is cooked. add salt and jaggery as per taste.
for Non-veg curry
In curry masala step add Garlic, Onion while roasting grated coconut. Can also give tempering of garlic at the end.
