can i ask how about first water temperature for brewing? i tried this way, but too bitter.

I use boiling water for tea brewing. But feel free to lower water temperature for your tea.

This was great, I just recently discovered I enjoyed using a gaiwan and now I enjoy using it even more! I put 1.5g of bai hao yin zhen in mine and just kept it grandpa style for a long time! I had never had success with "grandpa" style brewing before but the lid of gaiwan makes all the difference in ones ability to drink the tea with the leaves still there. Thanks! I'm definitely going to buy some tea from you some time!

Glad this helped. I still remember my first visit with Mr Xu (Xu Going Cha) and how shocked I (Phil) was when I realized we were supposed to drink from the gaiwan! It definitely helps with Grandpa style brewing! ❤️

My best memories of drinking from a gaiwan were in Wangjianglou Gongyuan 望江楼公园 in Chengdu. ❤ Birds singing, bamboo swaying and the click clack of mahjong tiles. What was not to like.

One of my best tea memories was also from Chengdu. Neither my wife nor I remember the name of the park, but I do remember walking out of a large stand of bamboo at the edge of a park and we were in an outdoor tea park. It was a hot day and many people were fanning themselves. The old men would flip open their fans and as the conversations became more lively, they would flip the fan closed and point and shake it at the person across the table to emphasize a point. We, of course, followed the Chengdu tradition and drank from gaiwan.

One question. Using this method, the green tea remains in water for a long time, through multiple infusions. Won’t hat make the tea turn bitter? Is it better to use the Gaian as a teapot, and empty the liquor into a separate tea cup(s), after each infusion? Thanks for you help.

Great question! This way of enjoying green tea is more demanding in terms of the green tea quality. Where are you in Australia. In Sydney, valley green tea may be able to assist. The owners are chinese and import tea from china, also tea sets and accessories.

Thank you for this video. We found some beautiful cups from the 1970s that apparently were made for restaurants and were found in an abandoned warehouse in southern China. They have beautiful, unusual patterns with "grains of rice" in the ceramics to let light come through. My wife also bought the gaiwan. This giawan is too large for me to use to brew tea for one or two (I use 100ml to 150ml pots and gaiwan) and while it would be beautiful as a piece of art on a shelf, I'm not a collector and think teaware should be used. This gaiwan is a perfect size from which to drink. I normally don't drink green tea as I generally find it too weak, but we have some Longing and I tried using the amount you recommended. Wow. It was wonderful. I have no doubt that using a gaiwan made it taste even better.
