❤️Drunken Chicken Recipe - Fen & Lady First
💛Main Ingredient
Boneless chicken thigh, 1 piece (300g)
Goji berries, 20 pieces
💛Seasonings:
Shaoxing wine, 2 tbsp
Rice wine, 1 tbsp
Salt, 1.5 g
MSG (monosodium glutamate), 0.5 g
💛Primary Utensils:
Electric cooker or steamer
Instructions:
1. Sterilize the Cotton Strings
Prepare cotton strings (3 meters, if you have shorter strings, tie the short ones to make the string longer) and boil them in hot water to ensure sterilization. Remove from water and let it cool.
2. Marinate the Chicken Leg
Take a chicken leg and sprinkle 1.5 grams of salt, add a small amount of MSG, 1 tablespoon of Shaoxing wine, and 2 tablespoons of rice wine. Spread the seasoning evenly, then marinate in the refrigerator for at least 4 hours, preferably overnight.
3. Tie the Chicken Leg
Use the previously sterilized string to tie the marinated chicken leg tightly. Ensure it is secure.
4. Steam the Chicken Leg
Place the tied chicken leg in an electric cooker, and add about 160cc of water. Start the cooker and steam for approximately 15 minutes. After the cooker stops, simmer for another 20 minutes.
5. Refrigerate and Skim Fat
Remove the steamed chicken leg from the electric cooker and refrigerate until completely cooled. Skim off excess fat from the surface.
6. Remove the String and Slice
Using sterilized scissors, cut the string tied around the chicken leg. Take out the chicken leg and use a knife to slice it thinly. Arrange the slices on a plate. Soak the goji berries in hot water until softened, then place them on top of the chicken thigh slices.
7. Adjust Saltiness
Take out the refrigerated broth, microwave it, and check for saltiness. If needed, adjust by adding an appropriate amount of salt to the broth. Stir well and pour over the sliced chicken leg to complete the delicious Shaoxing Drunken Chicken.
