Adam goes over everything you need to know about vermouth. The difference between dry (white) vermouth and sweet (red) vermouth, and in what situations you would use each one.
This is a behemoth of a category, and we couldn’t possibly go over everything in one video, but we feel this is the perfect video to understand the main aspects of vermouth and how each is used in cocktails.
At the end of the video, we go over 2 of the most classic vermouth cocktails. The Martini (white vermouth) and the Manhattan (red vermouth).

Cocchi is my go-to for cocktails like Martinez, Manhattan, Negroni. It’s fantastic. I vacuum-seal it as opposed to refrigerating it (especially because the bottle is so tall).

Another classic! We probably should have mentioned this one in the video. Thanks for bringing attention to it! Martinez 1 ½ ounces gin 1 ½ ounces sweet vermouth ¼ ounce Luxardo maraschino liqueur 2 dashes Angostura bitters

Vermouth is the French spelling/pronunciation. Vermut, your German word, is still used in Spain today. The Vermut culture in Spain is top class and is traditionally drunk before lunch. You go for a Vermut on your way to lunch. I love it.

The tradition of drinking vermut before lunch on weekends comes from the time where the families went to the church on Sundays -maybe it started in the late 19th century- and on the way back home they stopped somewhere for a quick "aperitivo" of vermut and some snacks. I only hope the kids were offered other options to drink!

Martini and Rossi red vermouth has an extremely strong oregano/thyme note to it that I absolutely can't stand. It's also a very common house vermouth used in bars so if you've had a Manhattan or negroni that you didn't like, you might want to try a different vermouth next time.

Great video, but as I have read, Red Vermouth is elaborated with a white wine base, and the brownish coloration comes from the caramel addition. Could you mention any example of a red vermouth that is made with a red wine base? Thanks again for the great explanation of all the concepts!

Thank you! Yes, vermouth is such a broad category that there are some made with a white wine base. Our understanding is that rose and red vermouths are made with a combination of wine bases and it's not at all uncommon to see the caramel coloring added. I haven't come across any that explicitly say they have exclusively a red wine base, but if you find any let me know!

I love your specs on Gin Martini, but I would say that it's not dry at all. Moreover it's a Classic Gin Martini 2:1 ratio. For Manhattan, Cocchi would be much better as Antica is very overpowering. Antica is fantastic to sip on the rocks, but makes very bad Martinez, Manhattan, Negroni, Americano..

All great points, we tend to agree. Cocchi is more mild compared to Antica. Both are wonderful products, but yes, Antica packs a punch.
