What have we learned from last year, don't fist butter. Duncan made an edible cake thanks to Jamie Livers recipe :-)

Considering that Red Velvet is actually quite technical, and considering Duncan's performance last year in the Great Kim Birthday Cake Cook-Off, I'm actually quite proud of what he made--that was a legitimate cake. Only problem was it wasn't red, which in the long run is a minimal problem. :)

actually, baking powder is usually calcium phosphate and sodium carbonate. If you use vinegar, you really need to use neat bicarbonate or it will come out too tart.

Buttermilk is an alkali liquid formed when making butter, when it is squeezed to remove said liquid. Vinegar is an acid. Due to this, the buttermilk and vinegar react, giving off carbon dioxide, which makes the cake rise.

Red Velvet cake is supposed to have a subtle sour flavor. The easiest way to achieve this is just to make a Chocolate Cake mix with Sour Cream. Also Red Velvet isn't always bright red. There is a way to get it that way but most ones I see baked from scratch are burgundy.

future tip is to grease your pan then sprinkle flour on it til the floor coats the grease and your cake won't stick. we need more cooking with the yogscast vids!

Congrats, Duncan! Oh yeah, and Happy Birthday, Kim. :D Just a suggestion, Duncan. The problem with creaming your butter and sugar for the icing is that your butter was too cold. Butter for icing should be room temperature for proper mixing. You only want cold butter if you're making a pie crust or any pastry that's flaky. Warm butter = smooth and creamy Cold butter = flaky and crumbly Oh, and they looked a little flat because you guys used 9 inch pans instead of 8 inch ones. Don't forget that the bigger pans will spread out more because, you know, wider and such.

i thought red velvet was meant to be made with beets, thus the red color. looks good tho

They forgot to soften the butter, that's why it was so difficult to stir into the powdered/icing sugar, which is actually just a simple combination of regular sugar and vegetable starch (such as potato starch,) that's why it thickens things so wonderfully.

I'm impressed! I was nor expecting an edible cake. Happy Birthday Kim!!!

yeah, it takes an obscene amount of red coloring thing to actually make it red, I'm happy leaving it brown and equally tasty. Happy Birthday, Kim! Now I want to make cake!

Protip: If you wanna check if the middle of the cake is cooked, pierce the cake with a wooden skewer or a toothpick. Once you pull it out of the cake, if it's wet that means the cake isn't cooked yet.
