cooking tip 101: Do not use eggs. It messes up the mild flavor of the fish. eggs are heavy tasting. I don't care about all the recipes calling for eggs in batter. they are wrong (I've been cooking 35 years). 1) dip fish piece in seasoned flour (salt pepper paprika) to coat 2) then dip the seasoned floured fish in milk. 3) dip that fish again in the seasoned flour to coat 4) dip in milk again 5) dip in panko to coat 6) fry and enjoy.
