The Pasqualina cake is a savory cake of the Easter period, typical of Liguria (more precisely of the Genoese) has a base of shortcrust pastry, very easy and quick to make at home.
The peculiarity of this Pasqualina cake is that each slice is a surprise, in fact, before cooking, raw eggs are added on top of the ricotta and spinach mixture, which once cooked, are the surprise effect of this cake.
This time I wanted to cook it with an air fryer, and I must say that it came out exceptional, but in the same way this pasqualina cake can also be cooked in the classic oven and why not, even in a wood oven.
