POPPY SEED CAKE RECIPE
Dough:
- 500 grams of flour
- 100 grams of butter
- 100 grams of sugar
- 2 yolks
- 140 ml of milk (I use unsweetened soy milk)
- 40 grams of fresh yeast
Filling:
- Ready or home-made poppy seed filling* 600 grams
- 2 beaten egg whites
- a few drops of almond extract
HOW TO MAKE IT:
1. Melt the butter, sugar and milk in a pot and set aside to cool
2. Place the crushed yeast and egg yolks in a large bowl, mash with a fork, and then add the cooled butter, sugar, and milk.
3. Add flour. Mix with a spatula and when the ingredients are combined, knead with your hands for 5 minutes.
4. Leave the dough to rise for 2-3 hours (the dough should triple in volume).
5. Add 2 beaten egg whites and almond extract to the poppy seed mixture and mix thoroughly.
6. Roll out the risen dough into a 1-1.5 cm disc. Spread the poppy seed mixture on it and gently roll up the dough.
7. Place the dough on baking paper and roll it twice.
8. Baking - 40 minutes / Oven 180 degrees (fan)
HOME-MADE POPPY SEED FILLING:
- 500 g of dry blue poppy seeds
- 50 g raisins
- 50 g of dried cranberries
- 50 g dried apricots
- 70 g walnuts or pecans
- 100 g of candied orange peel
- 4 tablespoons of natural honey - 80 g
- 100 g of sugar, e.g. cane sugar
- 2 tablespoons of butter - 20 g
How to make Poppy Seed Filling:
1. Pour the poppy seeds into a pot and pour three cups of water over them. Stir everything and bring it to a boil. Reduce the heat to a minimum and cook for another five minutes. After this time, pour the whole thing into a large but fine strainer placed, for example, on a wide bowl and set aside for 20 minutes for the poppy seeds to cool down. During this time, you will also get rid of excess water.
2. Grind the slightly cooled poppy seeds, well drained of excess water, in a meat grinder with the smallest attachment. Sometimes you have to grind it twice.
3. While the cooked poppy seeds are cooling (or at any other time), prepare the dried fruit - chop them into small pieces.
4. Place the ground and cooled poppy seeds into a larger pot. Pour four tablespoons of natural honey into the pot. Add about 100 grams of sugar. Add about 20 grams of butter and add about 70 grams of chopped nuts. Walnuts or a mixture of walnuts and pecans are best. Add all previously prepared dried fruits and mix the mixture. Place the pot on the burner with minimum power. Stir the poppy seed mass until the butter melts and the mass becomes uniform. However, this should not take longer than five minutes. The poppy seed mass is now ready for use (if you want to use it in a cake - add beaten egg whites).

ROYAL CHEESE CAKE RECIPE:
Ingredients:
- 1 kg of cottage cheese
- 250 grams of butter
- 160 grams of powdered sugar
- 6 eggs
- 2 tablespoons of vanilla sugar or a few drops of vanilla extract
- 150 grams of cream 36%
- 4 tablespoons of potato flour
- A few drops of arrack extract
HOW TO MAKE IT:
1. Separate egg whites and yolks.
2. Whisk egg whites.
3. Whisk the soft butter with the yolks and powdered sugar
4. Reduce the mixer speed and add cream, potato flour, vanilla sugar, arrack extract, and cheese (little by little). Mix until everything is combined.
5. Add whisked egg whites and mix carefully.
6. Put the dough into a cake tin (I used a round one 26 cm diameter) greased with butter or lined with baking paper.
7. Baking - 60 minutes at 170 degrees.
8. After baking, open the oven door slightly for 10 minutes, then open it halfway and take out the cheesecake after 5 minutes.
