as a true french Canadian, i would like to say that your poutine looks delicious. Although a poutine is subjective(and its the beauty of it), i would like to say how you should try your next poutine. fries: you should try to keep the starch, and fry them only one time but just a little longer(they turn golden when they are ready). they will be more tender and blend better with the cheese and sauce. cheese: your cheese was just perfect, i could understand people cannot have fresh ambient temperature out of the farms, but you got it perfectly, i was even impress with the idea of bits of mozzarella. Gravy: You should try spaghetti sauce and roast it in the oven. makes a good Italian version of poutine. I personally always use BBQ sauce from st-Hubert. But i don't think they sell that sauce outside of Quebec. your sauce looks fantastic too, look like a more close version to the 3pepper sauce. Love to see people love poutine :)

@@PlatinItWithWendy ok dear. I think I find the rootcause.. actually I don’t have the thermometer. Will buy it and make sure the oil temp follow as per your recipe. Will buy another packets of potatoes once my temp probe arrive and try again
