EASY BLUEBERRY MUFFINS YOU WILL LOVE!

Muffin Batter
325g All-purpose flour
198g Sugar
2 teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt
250 mL Milk
2 Eggs
3 tablespoon Melted butter
59 mL Oil
1 teaspoon Vanilla essence
1 cup blueberries
Streusel Topping
97g All-purpose flour
50g Sugar
1 teaspoon Lemon zest
4 tablespoons Melted butter
Pre-heat oven to 425 degrees F and line muffin pan with paper cups. In a bowl, add flour, granulated sugar, lemon zest and melted butter. Combine until mixture forms crumbs. Set aside.
Add milk to a bowl, eggs, melted butter, oil and vanilla essence, whisk together. Sift flour into a bowl, add baking powder, sugar, salt, baking soda and combine. Pour flour mixture into the milk mixture and fold in to combine. Avoid mixing too much.
Add some flour to blueberries to coat them then pour into the muffin batter, mix to combine. Scoop batter into each muffin tin, add streusel topping on each muffin and bake at 425 degrees F for 10 minutes, then lover the temperature to 375 degrees F for 8 minutes.
