Easy Breezy Summer Borscht | Chilled Beet Soup Inspired by the Barefoot Contessa
I LOVE beets and I love a good chilled soup. This Summer Borscht was inspired by the recipe in Ina Garten's cookbook - Barefoot Contessa, Cooking At Home.
The recipe (kinda)
• 5 medium beets, peeled and quartered
• 2-3 bay leaves
• 1 teaspoon salt
• Enough water to cover
*Cook the beets in the water with bay leaves and salt until they are tender and allow to cool. Keep the liquid to help thin out the soup.
*Once cooled, add a splash of cooking liquid to a blender, followed by 2/3's of the beets, the yogurt, a pinch of salt, and blend. Adjust as needed with the beet cooking liquid, salt, and/or more yogurt.
Then add:
• Fresh dill (a bunch)
• A handful of chopped pickled red onion (or 1/4 raw red onion, or shallot)
•The rest of the beets, chopped into a small dice
Stir to combine, chill thoroughly, and enjoy with a few extra bits of beets, dill, a drizzle of yogurt or olive oil, and a crack of pepper.

Hi! I forgot To mention, you can use that beet cooking liquid for any other soup that you’re making. Just know that it will definitely turn it pink!

i was byn some vejetables n i so this lady byn some beets n i was byn some to n she tould me that she makes soup with it n i was looking for a recepi n i came along with this recepi n i say i have to make this thank u it was great n the red onions woooow amazing thank u so much love it thy have so many but this one was the best yummyyyyy😋

My mom used to make Borscht, but I was never into it, this looks so good, the way you put dill in everything is the way I like to add Green Onions in everything. I love the outdoor lights :)

I am in Portland, Oregon. It is 109 degrees right now. I would be in seventh heaven with a chilled bowl of that borscht and a BUBBIES dill pickle right now. That's all I can manage...they're in the fridge, cold!! Do you ever put a bit of sour cream on top?

Ooh yes! I love bubbies! We get them in BC too! Sour cream - definitely. My bowl on day two had a swirl of yogurt on top cause I’ve always got it on hand ☀️

Pickled onions and beets are a first class accompaniment to a fish and chips dinner. You can also raise the proportion of protein and lower the fat in that meal by serving cottage cheese, peas, and creamy cole slaw to make it a crazily hypnotic meal, as the crisp and creamy, sweet and vinegary, hot and cold, textures and flavors overwhelm your senses.

@@HowToMakeDinner Spring Break road trip. AZ to FL & back. My very athletic 95lb fiancée decided she was too fat and needed to go on a cleanse thingee.. 2 months later I was still slicing, mashing, and straining beets through fabric for her.. Young love.. Haven't had a beet since that time. And we're talking decades!

Interesting that you mention lemon at the end, but I didn’t see you add it, so I checked the recipe, and no lemon added. Do you sometimes add lemon juice and other times, not?

I use yogurt and sour cream almost interchangeably these days (except for hot soups when yogurt can separate).
