Here is an easy Valentine’s Day cookie recipe.
Brownie Mix Valentine’s Day Cookies
Ingredients:
1 box fudge brownie mix
⅓ cup all-purpose flour
2 large eggs
⅓ cup vegetable oil
½ cup chocolate chips plus more for topping (omit if your brownies contain chocolate chips in the mix)
½ cup M&M’s plus more for topping
Instructions
1. Preheat the oven to 350° Fahrenheit. Line a large cookie sheet with parchment paper and set aside.
2. Add the dry brownie mix, all-purpose flour, eggs, and oil to a medium bowl. Mix by hand or with a hand mixer until well-combined. The batter will be thick.
3. Use a rubber spatula or wooden spoon to fold in the chocolate chips and M&M’s.
4. Using a 1 1/2 tablespoon cookie scoop, place scoops of dough 2 inches apart on the prepared baking sheets. Slightly press down on dough scoops to flatten a bit.
5. Bake for 8-10 minutes or until the edges are set but the middle is still fudgy and slightly undercooked. Take care not to over-bake the cookies.
6. Remove the cookies from the oven and immediately place a few extra chocolate chips and M&M’s on top of the cookie.
7. Allow the cookies to cool on the baking sheet or a wire rack 10-15 minutes before removing to cool completely.
