Easy cheap vegetable lentil soup recipe  

Make a big pot of this tasty and hearty stick to your ribs lentil vegetable soup at the beginning of the week for souper eastly meal prep!
Ingredients
-2-3 carrots diced
-3stalks celery diced
-1 onion diced
-3garlic cloves diced
-1tsp gingerroot minced
-1 large can or 2 cups tomatoes, diced
-1cup lentils (red cooks in 15-20min, brown/black need at least 60min on stovetop)
-1tsp fav curry powder
-1tsp oregano
-1tsp basil
-1tsp thyme
-2bayleaves
-4-6cups vege or beef or bone broth or water
-2tbsp butter or oil
salt and pepper
How to
1) saute all veg, seasonings in butter/oil in large pot on high for a few min. add broth/water. If cooking on stove top, bring to a boil, lid and lower heat to 15min to cook if using red lentils (60min or until black/brown/green lentils soft). If using instant pot, HP 5min, NPR for red lentils, HP 20min NPR if using black/brown/green lentils. season to taste with salt and pepper
