This recipe was super easy to make and was delicious! It makes a lot, so it's great for a family dinner! The only thing i would change (or should I say add ) would be the addition of some minced onion. Next time I make this (and there will be a next time!!) I will add 1 Tablespoon of minced dehydrated onions to the soup mix. Not as good as homemade chicken pot pie, but a really good tasting, fast, home cooked (think comfort food) casserole.
Chicken Cobbler:
Preheat your oven to 350 degrees
In a 9x12 casserole dish melt 1 Stick of butter
Add 3 to 4 cups of cooked chicken ( I used come canned, you can use leftover, rotisserie, store canned, etc..)
Season chicken with salt, pepper, garlic and onion powder to taste
(1) 12 oz bag of frozen mixed vegetables
Set aside
In a bowl add one box of Red Lobster cheddar bay biscuit mix with the seasoning packet it comes with.
1 cup shredded cheddar cheese
2 cups milk
Stir till well combined
Pour over vegetables, Do Not Stir
In a seperate bowl:
Mix 1 Can cream of chicken
1 1/2 Cups of chicken broth
Gently pour over biscuit layer of casserole (it will be watery)
DO NOT MIX
Bake in preheated 350 degree oven for 45-60 mins (mine took 50 mins)
Let cool for 15 mins and serve. Enjoy!!
