Easy, Delicious Chicken and Stuffing Casserole

This chicken and stuffing casserole is by far my favorite! I have loved chicken and stuffing since I was a kid. My mom never bought "boxed stuffing". (she always made homemade, which will always be my favorite!) I have tried many recipes, but they all left me disappointed. This one is super easy and delicious!
Preheat oven to 375 degrees
In a bowl, prepare stuffing:
Topping:
1 box chicken stuffing
1/2 stick melted butter
1 cup hot water
In a 7x11 or 2.5 qt casserole mix:
1 can cream of mushroom
1 can cream of chicken
1 pkg of onion soup mix
1/2 can of milk......mix well
Top with 2 (or more) sliced chicken breasts
Spread stuffing mix over top.
Cover with foil, Bake for 40 mins.
Remove foil and bake for an additional 10 mins.
Enjoy!!

I am so tired of my chicken and stuffing recipe which we love but I wanted more of a casserole. I take the stuffing and mix the butter, water, celery and sweet onion ant mound it up in the middle of the pan then put whole chicken breast on either side and spoon the gravy mix on top of chicken then bake the same way. But I'm trying yours tonight! It looks delicious. I always add sauteed onion and celery to my stuffing mix. I add extra poultry seasoning and ground sage to my gravy mixture. I sometimes substitute sour cream for milk or mix sour cream with heavy cream which makes it super rich! I am gonna play with yours though! Looks delicious!

I use precooked chicken chunks and veggies with Savory Herb stove top stuffing. It's awesome. Been making this for many years now.

Stovetop makes a lower sodium stuffing and Campbell’s has a no salt cream of chicken soup. I think I would add some broccoli to this also.

I have that same chicken & rice dish, been baking it for 30yrs and we have it at least twice a month! Will try with the stuffing, too!

Made this tonight subbing celery soup for the mushroom due to a mushroom hater. Was a bit salty with that sub but oh my, was delicious. The sauce was the perfect thickness. I’m going to try it again over the weekend with different guests and mushroom soup.

I did make it again with mushroom soup and it was not too salty at all. Woohooo! I took a page out of MeMe’s recipes and served it with cranberry sauce which was a winner. I also made a cucumber and onion salad that was nice and light and a good foil to the casserole.

It looks super yummy! And I love the suggestions in the comments of mashed potatoes and/or cranberry sauce, Yum! 🎉 The only thing I’m concerned about is the sodium level with all the condensed soup and soup mixes plus the flavorings on the stuffing mix... I wonder how it would taste if you left out the onion soup mix?

The onion soup gives it great flavor, but you could absolutely leave it out. Maybe add some dehydrated minced onion or onion powder instead. Thanks for watching! 😊

I bet you could. I would maybe put a paper towel over the top of the pot and then the lid, to catch the condensation so the stuffing doesn't get wet and mushy.

Have you tried it with frozen veggies? Perhaps a layer of leftover mashed potatoes under the stuffing? I think I’ll try tit this week.

I haven't because I have some picky eaters here, but I bet that would be delicious! I used to make a "must go" casserole after Thanksgiving with the leftovers. It was stuffing, then turkey, gravy, broccoli and cheese, few extra slice of American cheese, mashed potatoes with canned biscuits on top!!! So yummy! Let me know how yours turns out!

I know there are lots of recipes here on RU-vid to make a homemade version of onion soup mix. Perhaps try one of those! I believe they are made with dehydrated minced onion, onion powder, beef bouillon, and spices.
